Super easy and delicious plain vanilla muffins recipe! Just mix everything together, bake and these yummy and simple muffins are ready to be served with your cup of tea or coffee.
So soft, moist and fluffy , you will never buy vanilla muffins again! Nothing compares to a homemade freshly baked muffins. Impress your loved ones with your baking skills, but don't tell them how easy it was ;)
This recipe makes 12 vanilla muffins.
Prep time: 10 minutes.
Baking time: 25 minutes.
Total: 35 minutes.
RECIPE:
2 eggs
125ml (1/2 cup) vegetable oil
250ml (1 cup) milk
200g (1 cup) sugar
360g (3 cups) flour
1 tsp baking powder
1/2 tsp salt
100g (2/3 cup) raisins or chocolate chips (optional) - I did not add it
Bake in a preheated oven at 180C / 360F / Gas mark 4.
Baking time: 20-25 minutes, or until toothpick comes out clean.
Every oven is different, cooking times may vary slightly, keep checking it every 5 minutes after 20 minutes of baking.

I made a strawberry syrup by cutting about a pound of strawberries into small pieces and i put it in a mason jar with brown sugar for about a week. I got a nice gooey syrup from that, which i mixed in with this recipe. I then added the cut strawberry pieces on top of the muffin filling and the result was blood red strawberry muffins with little strawberries on top. Amazing, i advise anyone to try this, ans you can use whatever fruit you want. I will try kiwi next because i wanna mke green muffins lol. Peace!

I made these today! Instead of 3 cups of flour I used 2 cups of flower and 1 cup of plant protein powder. The plant protein power made the texture thicker so I had to compensate by adding an additional cup of milk which did the trick. I didn’t have vanilla extract so I used nutmeg instead and I used only 1/2 cup of sugar since I don’t like much sugar. Overall it came out great! Thank you!
