I think I am a very experienced and good cook...after all I have been doing it for 50 + years...so I stumbled onto John's Preppie site and wondered what ever could he teach me....lots apparently...I love John's recipes and methods. Everything I make from his tutes turns out wonderfully. The choc. Chip muffins are wonderful...I altered the recipe to use buttermilk but used the John's method adding wet mix to dry, fill mixture to the top and 5 min. hot oven for crunchy top...worked a treat. P.S. if you want to use buttermilk instead of full cream milk, halve the baking powder and put in half a teaspoon of bi carb. of soda. Now my muffins are high crunchy topped little pots of yummy. Thanks John....

I am not much of a baker. I absolutely love cooking, but once in a while I get the urge to bake (once every few years haha). I made this recipe today and these are actually the best muffins I've ever had! This is the 4th recipe of John's that we've made and each has turned out beautifully. After filling all 12 cupcake liners in the pan right up to the top, we had a little batter left over. We put it into a large soup mug and microwaved it for a minute, checked it, then for another 30 seconds It made a light, fluffy "Mugfin". We used mini-morsels, so we'll see how they are when they finish cooling. The Mugfin was just fine with a tall glass of cold milk.
