After seeing Uncle Roger react to Hersha and Jamies Egg fried rice videos I knew I had to give it a go, but you know me I needed to make it vegan!! So after a few tests we nailed down the BEST Authentic EGG Fried rice with VEGAN EGG!!

Adding some "mock vegetarian meat" from the Asian store aka flavored seitan takes it to the next level! I like the abalone version the best, it has a soft, fall-apart texture. Also it's really cheap, like around $1 per can

Gluten, bahahahaha, one of the most problematic ingredients in grains, along with other anti-nutrients. And you wonder why Veganism fails so much and is riddled with health problems. *facepalm. First thought after seeing the title: Oh, surely sth with JUST egg! Who cares I cannot buy it where I live. The video will be bomb anyways. . And you know what? It definitely was! You're still the only person whose videos are my fave in spite of using A TON of products I cannot get my hands on :D Your sciency projects are just so entertaining and genuinely interesting! Honestly, I will be watching these even if you start basing your recipes on NASA-only ingredients ;P . Anyways, I really enjoyed watching the video and I hope you had fun making it! ahhh thank you Margaret!!!! Its so hard to find a vegan egg that works similar to real eggs. Just just nailed it hahah but honesty if the eggs were cooked separate you could probably use just about any egg replacer here and it would be great! Always love seeing your comments! Just Egg for the win!! It's my favorite! You should've added a bit of black salt to it. And you already know msg.. Lol. But even without these, it still looked delicious! I think you should travel and do shows. You can sell tickets and have taste tests. It would be really cool to see you making stuff live, and then be able to try it afterwards! 😊

The GLORIA egg requires a much lower heat. Cooking at high temperature will make it fall apart. You want a low-medium heat and cook for about 5-7 mins. Texture will come out like eggs. Mix 5g +45g Plant milk(preferably calcium fortified)=1 egg.

Knuckle method is best. Works like a charm. My dad taught me when I was a kid and it’s perfect.

Just Egg is awesome! I love that stuff! I can't wait to try this recipe. I've done my own version of fried rice, I make some rice, when that's done I add some Goya Sazon to it, set it to the side to cool. Then sautee some onions in oil in my wok. Just before the onions are about to caramelize I throw in some frozen mixed veggies. Give everything a quick stir for a few minutes, then throw in the rice, stir everything up, get it all nice & hot. When it's ready pile it on a plate, I'll usually have some Gardein fake meat or some seitan, topped with some fresh steamed broccoli Delicious, if I do say so myself. I'm definitely going to try it with Just Egg. I want to try & make a French toast batter with Just Egg also. Thanks for introducing me to Just Egg!

Hi, was so impressed with the look of your mung bean egg mixture but looked in the description box and couldn't see a link for it as you mentioned it would be in there, so could you please add this as I would love to try to make it. Uncle Roger is great. I tried it today too. Made a egg from cheackpea flower. I worked also with chili, because they are gonna red these days. It was really hot, but so good :)

One vegan egg option is soft scrambled tofu with a touch of turmeric, garlic and black salt. The black salt makes it taste just like egg! It smells like egg when u cook it / add black salt to the tofu

Wow! I have tried to find this product in the uk. I miss egg fried rice with that taste of fresh spring onions. I always use to keep cooked rice in the fridge for those lazy days. 😩

This is impressive! I didn't expect the JUST egg to work at such high heat. I thought it would split, curdle, or do something else. This is really really interesting. I wonder if it'll work in custards and baked goods like brioche or even cake.

Thats exactly what I was worried about!! I knew that my other eggs I've made wouldnt work simply because of the heat. I was going to try but I just knew they would fail. I tested these 3 just to see where they would land. The vegangastronomy egg did pretty dang good even though it shrunk. hahah I will have to say that just egg totally works in a custard. I've been testing like crazy and nailed a creme brûlée that is indistinguishable... its WILD. I'll have that video out soon!

Id probably rinse the cooked rice in cold water than into the fridge..hopefully this works..so goid you inforn us if the cooking science of why we use what we us and how fir the results we want out of food. Terrific man wrll done.

Growing up in an Asian household, there was no proper measuring. Pour until it looks good, a dab of this, may some of this, and taste as you go. You have mystery leftovers in the fridge? put it in the fried rice. Otherwise, your fried rice looks amazing!

This looks really good. I just started out as vegan and havent missed egg yet. But I think I will soon. I want to try that egg replacement. One thing that bothered me a lot was how you poured your oil into the wok 😅😅😅

You're supposed to put galirc in first then add egg, then rice and other seasonings then garnish with spring onion off the heat. I deffo wanna see Uncle Rog react to this!

If that egg replacer can't be found anywhere (I wouldn't know how to find it here in Italy), a good, very good result can be obtained scrambling a cream made of chickpea flour and water (and some spices). ;)

Is there any reason you didn't use a bit of sesame oil? When I used to cook fried rice a lot I always thought toasted sesame oil was a must. Either way it looks good!

you don't ever cook with sesame oil. it is flavoring oil meant to be drizzled at the end.

Uncle roger:- vegan? No, no, no. Egg fried rice, no egg? Haiya. Otn:- the garlic and white part of green onion should come first. Fry until you can smell the aroma of garlic (this is very important). Then rice, salt, msg, soy sauce, pepper. Then scrambled eggs and chilli. Green onion for garnish.

A carbon steel wok is totally meant for flame. The point of the round bottom is to have a searing hot bottom that the flame gradually reduces as you go up the sides. Sure you could put a wok on an electric stove top, but its not working the way its meant to. I hope that makes sense? Its like taking a Harley Davidson motorcycle on a dirt bike track. Sure you can ride it there, but its meant for the road.

Wont pre frying the ginger and garlic bring out more flavour? Cus that's what we usually do. Also a little bit of sambal will just take it to the next level level.

Some clever food science in the egg substitutes. I make vegan fried rice by simply omitting the egg. 3:20 - Clever magician hiding of the Kikoman Japanese soy sauce used for Chinese fried rice. Uncle Roger not happy.

Hey. I made your daikon bacon the other day, but mine didn't curl up like yours did. Any idea what I did wrong? Also, which egg replacer (mungbean, sunflower seeds so forth) is your favorite?

ohhh no! im not 100% sure why it wouldnt have curled. Could have been a heat issue, either too hot or not hot enough. That isn't something thats came out in my testing yet. If I figure it out, ill come back. My favorite general egg replacer is now pumpkin seed or sunflower seed! they both work really great

If you perfect Tamagoyaki sushi in such a fashion that the texture is firmer, and mung bean flavors are gone (if you choose Just Egg), you sir, will be the person that helps me say goodbye to eggs forever. I'm open to other vegan egg recipes too. I love 'Just Egg', I eat it all the time, but it just doesn't fill the craving I get for Tamagoyaki.

I hv been making fried rice lately with Just Egg. However, I find that Just Egg sticks alot to the pan when cooking! And it’s hard as hell to clean the pan!

Yup, I try to avoid teflon but have a brand new teflon pan just for that and never heat it above medium. Should be nice and slick for awhile ... you really need an oiled good quality non-stick surface.

OH NO!!! Requirements for Uncle Roger approved egg fried rice... • never use a colander to wash rice ✅ • cook rice from rice cooker❌ • use a day old cold rice ✅ • use GARLIC & shallots! ❌ • use CHINESE sesame oil ❌ • vegetable oil for sautéing ✅ • MSG... A LOT OF MSG!!! ❌ • spring onion & chili for garnish❌ I hope I'm not missing anything...😅

Nobody listens to the guy hiiiiiya Noooooo MSG!?!? MSG is vegan Green onions are garnish A fried rice secret , immediately after the egg hits the wok put the rice on it and keep flipping it. The egg gives the rice a nice coating that way.
