Just made this and it was delicious!!! I made it with 3 cups of rice to make a family size portion so I tripled all the veggie ingredients. The only thing I changed was more soy sauce, red chilli flakes and swapped bok choy for spinach. Thank you for this easy one pot healthy family meal ❤

This is pretty much my go-to fried rice recipe except I do scrambled tofu instead of veggie ham and I use whichever veggies I have on hand. At the end I add toasted sesame oil and chili flakes. I used a shallot this time because I didn't have red onion also I honestly I forgot to add msg but it still turned out amazing with salt and liquid aminos.

You can of course! I do when i have leftover rice. but if you think about it, the “best” fried rice at authentic chinese restaurants are cooked with fresh rice! Either way I guess the bigger key is to cook it over high heat😄
