Hi everyone! A few notes on this. No it doesn't taste like pumpkin at all, all the seasonings and other ingredients completely overpower it. It doesn't taste EGGSACTLY like an egg, but it hits all the savory notes that I'd expect, especially in a sandwich or burger. Just make sure you add black salt after cooking too for extra eggy flavor! Oh and this makes a dozen eggs!

@@MrNOAH504 I wouldn't recommend it, if you do leave it out you'll need to add something in its place, otherwise it might be kinda bland.

​@@BeautyBritt it's like cheetos sold in Turkiye 😅 you can replace 1 tbsp of nooch (nutritional yeast) with 1 or 2 medium-sized green olives for taste.

I tried making vegan deviled eggs for Friendsgiving using silken tofu as the egg and a mashed potato-based spiced yolk. The silken tofu fell apart too easily. So I tried again by making agar agar and blending the silken tofu in with cornstarch, then pouring that into an ice mold. While that allowed me to shape the egg more easily, it was still too soft and fell apart in one's hand. Maybe you can experiment with it and figure it out, Thee Dude!

Oh Tabitha Brown has a recipe for that using mushrooms but she made it taste like Devil eggs but pickling the mushroom and then hallowing the middle out.

I made deviled eggs with cashew and agar agar as the base poured into and egg form. turned out great texture etc.

You should (if you don't already have) black salt - it tastes insanely similar to fried egg. I always use it when making tofu scramble or tofu slabs and jt tastes amazing. 😋

Pretty cool, TBD. You da mang! I admire your scientific side… much like Sauce Stache’s experiments. To be honest, I enjoy watching this stuff but I won’t probably make it. In fact, a vegan egg sandwich made of a fried slice of tofu and a cornstarch slurry yolk (made with turmeric, vegan mayo and black salt) is just fine for me. Thanks for a great video… 🙌

excerpt from the recipe linked in the description, because i was personally concerned about this: “One last thing, if you need to dispose any of the alginate bath, don’t pour it down the sink as it can clog it up. Just add it to a bag and throw it out with the garbage!” just in case anyone else had the same thoughts as me and wasn’t sure where to look. also thank you for adding that detail

What the heck? This is so cool! Part of going vegan has been a lot of experimenting and progress in plant based foods, it's so exciting finding new ways to improve and explore. I'm so glad people like you are here to keep pushing that!

@@lastlime3792 Not entirely sure what you mean by "as you destroy the planet". If you're saying all humans contribute to some degree then I agree, but if you think a vegan lifestyle is somehow worse for the planet then you're arguing against mountains of evidence and basically all of the reputable scientific journals' published papers. I don't see any downsides to reducing animal products to the amount that is practicable, other than minor inconveniences like some people having weird stereotypes about you and you sometimes need to get a bit more creative with food since most of our supply isn't geared in that direction. Happy to hear if you have opposing thoughts to this though.

If you mixed the 2 the yolk and the whites can you make accurate scrambled eggs? Or is it more suitable to to use an especific recipe/mix for scrambled?

If you are looking for ideas on your next sandwich, I would love to see you come up with your version of a vegan bahn mi. There are many varieties but the traditional one has always been challenging because of the variety of ingredients. What makes this great for vegans is because is often loaded up with fresh veggies.

Thank you for the recipe - you inspired me to get out of bed and give it a go :) I have a recipe similar to this, but I use soy milk and plain (non-glutinous) rice flour - so naturally, I wanted to give this one a try. The only critique I have is that the glutinous rice flour does not stay stable after sitting for a few seconds and begins to break down into a "glue"-type of consistency. I tried this recipe again, but replaced the glutinous (sweet) rice flour with the regular/non-glutinous Asian rice flour and it works great. I've also used non-Asian rice flour in my other recipe and it works too. Good luck! :)

I've tried the BeLeaf too. The white part was crazy realistic and I loved it (I also added black salt), but I didn't love the taste and texture of the yolk so I remove it lol. I've thought about making a runny yolk like the video, but I haven't had the time to experiment. I hope to at some point. And every time I try a new recipe, I have to get some weird ingredient on Amazon, which also annoys me..lol 😐

With the fried egg do you flip the egg white with the yolk or do you fry both sides and then add the yolk? Anyways this looks amazing might actually order the wild ingredients to make it!

No you don't flip it, I mean you could but not sure what the final texture would be like. I just pour the white, add the yolk and then fry until it's where I like it.

Not convenient for the chickens. Not all natural, either. We've selectively bred them so much that they're producing 30x more eggs than they're naturally supposed to, which is very strenuous on their bodies and not "natural" at all. Not to mention, eggs are one of the most common allergens, so its great to have other options for people who can't eat your "natural" eggs. But you didn't even consider any of that. You just like leaving angry comments on KZbin videos :)

Listen. I'm not a full fledged vegan although I've eaten many vegan dishes and I have no problem with vegan beliefs or anything. And watching you makes me delve even more. I'd eat that egg!!! I'm really curious if the runny yolks are freezable. Maybe if some of the starchy parts (or the pumpkin?) are replaced by fats, e.g. a very ripe avocado?

Instead of leaving the sodium algenate mixture in the fridge to remove all of the air bubbles, could you use a vacuum chamber instead?

Looks really good. I’ve seen Sauce Stache’s video as well. Does any sweetness come through from the pumpkin purée? That’s my only concern. If not, I’m all in.

Not a fan of yolky eggs, I like scrambled for the most part. I am intrigued by the whites though. There are videos of deviled eggs using potato "yolks"; since I like the yolk to be harder, I might try one of them with your version of whites. But you've created a very convincing fried egg, good job!

This was intricate. I think you can get almost a cloudy version with whipped aquafaba and whisk in some of the pumpkin mixtures and then steam it in a pan. :D Both are fine. But that's a lot of work for an egg. I guess I continue to not eggs. :D

Yeah the process isn’t really complicated I think just uncommon. The first time I tried it it was weird but you get used to it pretty quick, definitely fun!
