Yes and no, if you have ever used fresh rice for fried rice, it gets sticky and not like that loose texture you want for fried rice. But rice a day or two old gets stale and dry, so when you rehydrate it a little you get a really nice texture that is firm but still soft

I just made this and it came out phenomenal! Sorry, I used fresh rice, three-quarter cup long grain and quarter cup jasmine mix. I also seasoned after each step. I think it came out better than takeout.

As an Indian we would add some red chilli powder of green chilli for spice and some. Garam masala if needed, it will notch up the taste of the fried rice and it's better to season the egg too with salt and chilli powder ❤

I like to mix the onion in with the wefg and soy sauce then mix half with half the rice and vegetables mixing quickly to coat the rice add rest of rice and veg to rest of eggs .when available I like to use scallions instead of largwme onions

I like to mix eggs raw with the rice before it hits the pan. Use minimal soy sauce or fish sauce instead. That way it will get a beautiful golden color when done cooking instead of having a brown color of my egg fried rice.

This is the closest I've seen to what i grew up eating at the New York China Buffet and surrounding family shops, plazas, malls, other buffets- you name it. It was a staple: large minced onions, golden buttered scrambled eggs, old yellow-colored rice with peas carrots and sometimes, scallions or bits of lettuce if a chef had other stuff available (we would joke "must have hired someone new?" When there was black pepper or new additives LOL) but THANK YOU!! i knew there was oyster sauce and possibly sesame oil involved but not the cooking wine, interesting!!

I've heard long grain is one of the best to use. I always use long grain and never had an issue. Some people mix long grain with thai jasmine rice too, I've yet to try it myself though.
