I absolutely love 🍍🍍 They’re so fresh and tasty and so flavourful. And I also love pineapple upside down cakes. A classic, they’re so beautiful and a family favourite. I make it so often and this time I decided to do an eggless version so all of you can try it too!
It’s better to make this cake in a pan with removable bottom/ spring form pan but a regular one like I used in the video works too!

INGREDIENTS-
1/4 cup salted butter
2/3 cup brown sugar
1 tbsp lemon juice
6 slices of pineapple ( canned is better)
1 cup yogurt/ homemade curd
1/2 tsp baking soda
3/4 cup castor sugar
1/2 cup oil
1 tsp vanilla extract
1+ 1/2 cup all purpose flour (maida)
1 tsp baking powder
1/2 cup shredded coconut
1/2 cup milk
