I'm with her, I love my rice pudding warm. Whenever I make it I eat it right away, or heat it up before eating it. That said, I also typically do it with coconut cream and occasionally some pineapple chunks mixed in.

It looks delish! I am definitely on Team Skin. Also Team Raisin and Team Cold. Speaking of store bought egg nog, Glen perhaps you remember Becker's convenience stores. They were a very popular chain in Southern Ontario and sadly no longer in business. They had the BEST premium store bought egg nog I've ever tasted. I sure miss it come Christmas time.

Try adding dried cranberries when heating. They add a nice flavor that compliments the rum/whiskey, and the red perks up the beige of the pudding.

I watch every video, mostly on my smart tv and I can "thumbs up" but not leave comments. Hmmmmmm I told my Mom (94yo) last night about you using cooked rice and she said stick to making fried rice with it hahahahaha. She thinks the texture and taste would be better with raw rice as it absorbs the milk and flavours versus rice that has been cooked with water. I said okay and agreed that I have always started from scratch but I would love to see a taste test. "Team Skin" made me laugh for reasons I cannot explain here lol. Raisins - meh I do add them about half the time. Love your cooking and chit chat too.

I like to brulee the top like creme-brulee, and I would typically use risotto rice for texture. Gotta try it with egg-nog, nice idea :) I wonder if it would benefit from a pinch of salt.

I can't find the recipe and my grandma used to make it but didn't pass on the recipes It had green and red candied cherries and I am not sure what else My thing is I'm not good at winging amounts and things can just end up sticky messes

It is a brave man who steps into a rice pudding demonstration: devotees are just about rabid in favor of their particular 'best way.' My way is with sugar, full-cream milk and whipping cream (mixed half and half.) Long, slow cooking is the key and the cream and sugar caramelize to a light butterscotch color and flavor.

@@glennwiebe5128 It is a 'minimalist' (not to say 'purist') approach to the dish. Another goal is to let the rice become quite custardy in texture, so more cream and milk may be required than Glen and Friends use.

#TeamSkin for rice pudding as well ;) I actually like it both ways, but prefer it with skin. Also, for a special treat: butter the ramekins lightly and then sprinkle it generously either with grounded toasted almonds or grounded praline. It's quite amazing :)

Raisins yes/no. Serving additions: I suggest serving with a small creamer of nog (warmed/chilled), a 'nip' bottle of rum and/or hiskey, and rum soaked raisins for the fruit inclined. You can even flambé, if you first clear the combustables (to burn off additional alcohols and warm it (slightly)).

Well of course egg nog rice pudding - yum! And I only make rice pudding out of leftover chinese takeout rice. Boil in milk twice, adding sugar, cinnamon, nutmeg the 2nd time. Beat an egg, mix in after pudding comes off heat, cover with plastic wrap, leave on counter to cool.

Warm rice pudding is the best. I've always thought rice pudding should more closely resemble porridge than custard.

A common style of Southern rice pudding is to bake it, and this recipe would work with that method if you were to use a Bain marie at 350 until golden brown and bubbly still delicious hot or cold.

honestly, as long as you are cooking it, giving it to children is fine, and even if you drank it uncooked with rice, you put so little alcohol in, that the affects wouldnt be noticeable, its just enough to unlock other flavours and add some new ones, not enough to make anyone drunk, not even a child with no alcohol tolerance. probably more alcohol in bread, or any yeast product

Only milk in 4 litres size (1 US gallon) comes in 3 bags pack in Quebec and Ontario mostly. 1L and 2L are cartons. You have to consume a lot of milk/weekly to buy in bags. Like families with children, cooks, etc. Household with 1-2 adults often can make due with 1-2 litres cartons.

@@aaron74 LOL! I have the same hatred for tapioca pudding. The only two flavors I like are chocolate and vanilla. It's a texture thing for me. Pudding is supposed to be velvety-smooth. Not chunky and lumpy with bits of stuff in it.

Should probably say that cooked rice is very high risk for food poisoning. If you want to keep rice it should be brought down to room temp or below within about an hour of cooking (the easiest way is to use cold water) then place it in a covered container and put it straight into the fridge immediately. If its not chilled and fridged within an hour THROW IT AWAY. Its really not worth messing around with rice.

I've always salted my rice while cooking it so it doesn't taste bland later, although I will admit I've never really done a side by side to see if salting it during cooking or not hurts the overall taste in a finished dish. It might be worth looking into, since it would lend leftover rice to be used in more dishes.

Due to the language difference, my own stupidity and the trickery of false cognates, I expected a rice pudding would be something quite different and stranger. In Brazil, that - or something akin to it - is simply called sweet rice, but it's a bit less evolved. And commenting helps with the algorithm, so the rambling never hurts.

Yes - there is always an exception. But in the vast majority of cases, like 99% of all brands; both pure and artificial vanilla is 45% alcohol.

considering it's simmering, I'd say the alcohol content of ANY of the ingredients beforehand is irrelevant. Alcohol evaporates at room temperature, never mind on the hob...

Actually - you might be surprised at how long you would need to simmer this in order to 'burn off' the alcohol. after 1 hour of simmering 25% of the alcohol will still be there. For me that's not a problem, but the alcohol does hang around.
