Today I will show you how to make Eggplant or Aubergine caviar spread. It is a yummy dish or starter. This eggplant caviar is so healthy, tasty and perfect appetizer. Perfect for vegetarians and anyone who loves vegetables. I like to serve it on a toasted rye or black bread with some salad. If you like your food spicy, you can add some chilly into the mixture. This served 10-12 people. Whenever I had eggplants lying around, I always made eggplant caviar, ikra. Eggplant caviar makes a great party appetizer or “zakuska”. It’s an old Russian favorite.

My kinda gal. I love garlic, and I love eggplant caviar, it's also good on sandwiches instead of mayo and ive also used it as pizza sauce instead of the traditional pizza sauce. Good job

My mother( from Belgorod ) added finely chopped capsicum as well and always a few fresh Bay leaves and black pepper. But it looked exactly the same as yours and yes it tastes fabulous especially on Borodinsky bread

There is an easier way (and more testier to me) to do this cavier. Instead of cutting and then frying egg-plants, I simply put them into oven and bake until they are soft. Then I cut baked egg-plants into halves and take out pulp with the spoon. Thus, the egg-plants become very smooth like paste - you do not need to blender them.

i think its a different way of cooking them and its still nice, but its not necessarily easier and you don't get the creamy taste from other vegetables. also i wouldn't call roasted eggplants as caviar. But i know what you mean!
