I made this eggplant curry and it was good Then I made some changes that suited my taste and it was even Better, I made it with pumpkin, doubled up all the spices, Added some water and coconut milk after putting in the pumpkin and cooked it for 30 mintes. I also added a teaspoon of commercial curry powder and some chopped coriander leaves. Delicious!

Thank you! This is great and I'm about to cook it this evening. There's a new Indian supermarket opened in town with everything imported from India so this recipe will be the first with me using all the spices I bought yesterday. It's mind-blowing the potency from the aroma from the imported spices vs regular grocery store spices (which I've bought for years!) It's like the difference between night and day and so much cheaper too! Thank you for sharing this xx

I love Indian food and have tried out several recipes on youtube and been disappointed. They were Aloo Gobi recipes and just didn't come close to what I get at the Indian restaurants. I must say though that I am very excited with how this recipe came out!! Thank you for a great recipe 🙏 I will add it into my weekly meal rotation. I didn't add the chilis, and I added 1/4 tsp of Kashmiri red chili powder instead and also 1/4 tsp of mango powder. My tastebuds are happy! Please share a link for an aloo gobi recipe.. vegan is ideal.

Hi, when you cover the eggplant with a lid, do you turn the heat right down so the masala doesn’t burn? How long would I leave it for? Thanks

You can leave the heat on medium low. Check and turn down heat if necessary. Eggplant should be cooked in 10 to 15 minutes. Enjoy 😀
