⬇️⬇️English recipe follows⬇️⬇️ 魚香茄子炆米粉 材料: 米粉500克 免治豬肉1磅 茄子2條 鹹魚1件 辣椒仔1隻 芫荽1棵 處理: 1. 大火煲滾1鑊水,放米粉煮至軟身,夾起米粉,擎乾水,放在碗內,冚蓋焗3分鐘。 2. 豬肉調味: a. 生粉1湯匙 b. 蠔油1湯匙 c. 生抽半湯匙 d. 胡椒粉1茶匙 e. 油1湯匙 撈勻。 3. 茄子,清水洗乾淨,切一條條。(建議在煮之前切,防止氧化。) 4. 辣椒仔,清水洗乾淨,切粒。 芫荽,清水洗乾淨,切碎。 烹調: 1. 大火在鑊內燒熱油1湯匙。 2. 放豬肉煎香。 3. 豬肉,一面已煎至金黃色,反轉另一面繼續煎,同時,放鹹魚落鑊煎香,轉中慢火,取出魚骨,壓碎鹹魚。 4. 放茄子落鑊,轉大火炒香。 5. 加入清水500毫升,冚蓋,炆2分鐘,試一試味。 6. 加入調味料: a. 蠔油1湯匙 b. 糖1湯匙 炒勻。 7. 放米粉落鑊,炒勻,加入清水,炒勻。如果水分不夠,可酌量加入。 8. 米粉已煮至收汁,放上碟。 9. 放上芫荽及辣椒粒。 10. 完成,可享用。 Braised rice vermicelli with salted fish and eggplant Ingredients: Rice vermicelli 500g Minced pork meat 1 lb Eggplants 2 Nos. Salted fish 1 pc Chili 1 No. Coriander 1 No. Preparation: 1. Heat up a wok of water at high flame. Put vermicelli and boil until it turns soft. Pick up vermicelli, get it drained. Put in a bowl. Cover it up for 3 minutes. 2. Season the pork: a. Tapioca starch 1 tbsp b. Oyster sauce 1 tbsp c. Light soya sauce 0.5 tbsp d. Pepper 1 tsp e. Oil 1 tbsp Mix well. 3. Eggplant, rinse with tap water. Shred it. (Cut before start cooking to avoid oxidation. ) 4. Chili, rinse with tap water. Dice in cubes. Coriander, rinse with tap water. Chop well. Steps: 1. Heat up 1 tbsp of oil at high flame in wok. 2. Put pork in wok. Fry well. 3. The pork, one side has been fried into golden yellow, flip over and continue frying. Put salted fish in wok and fry well at the same time. Turn to medium~low flame. Take out bones from salted fish. Crush it. 4. Put eggplant in wok. Turn to high flame and fry well. 5. Add in 500ml of water. Cover up the wok. Braise for 2 minutes. Check the taste. 6. Add seasoning: a. Oyster sauce 1 tbsp b. Sugar 1 tbsp Fry well. 7. Put vermicelli in wok. Fry well. Add in water, fry well. If water is no enough, add in appropriate amount. 8. The vermicelli has been cooked and the sauce becomes thick, put on plate. 9. Put coriander and chili cubes on top. 10. Complete. Serve.
