This easy eggplant parmesan recipe is a classic Italian comfort dish. Also called parmigiana di melanzane, this dish has each slice of eggplant coated in breadcrumbs and then pan-fried until golden brown. Hi Bojana- this is a great question. I know lots of people who like to put salt on the eggplant to draw out the moisture but for me, I don’t feel that it’s worth the time investment. I was able to get my eggplant extra crispy in the pan without doing the salt step so I don’t feel it’s worth it. Thanks!
