Hey, there's the bottle we sent! Glad you guys liked it, they make a few different spirits at the farm but this bourbon is kind of head and shoulders above their other stuff. To me at least. As others have said, it's actually not far from Allentown. But it's out in the boonies. Very cool place to visit, nice setting to chill with a cocktail and they have a small food menu as well. If you ever get through your backlog I have something else "local" in mind to send out.

As someone who grew up in a town of less than 2k in Schuylkill County, New Tripoli is not very rural. I can take you to rural. I live now in MontoCo, can wait to stop in their on my way to see family.

I love about a half hour away from 8 Oaks. So far I like all their whiskey, both their bourbon and rye. Their Bottled in Bond Veterans cut is great! 🥃

New Tripoli is hardly the middle of nowhere. Eight Oaks is only about 15 minutes from where I live. I've driven by their distillery dozens of times, but it's only open on the weekends so I've never had a chance to stop in. They grow everything on their own farms so it's a completely locally produced product. They have a stand set up in the local (Allentown) farmers market where you can buy their products. Being in Pennsylvania, the only way you can buy spirits outside of a state run store is if it's sold by the in state distillery that makes it. They make some good products. I'm glad to see them on your channel and get some recognition on a larger scale.

New Tripoli is about 15 miles from where I live in Allentown PA, and New Tripoli could be called Lehigh Valley. Its really awesome to see you guys show us some love. PA spirits I feel are under-represented in the US market, given that many of our distillers might not have the capacity to do nationwide stuff. But they are massively popular here, because they're much more unique than the usual spirits you'll find in a lot of bars.

7:56 - Diacetyl is also a byproduct of converting malic acid to lactic acid, commonly found in Chardonnays from California. As Daniel says, it gives the wine a buttery note which sometimes can be overbearing.

The chemistry talk is fascinating because I’ve tasted that exact buttered popcorn note in a whiskey before! Copperworks put out a Fino finished malt a couple years ago and it so overwhelmingly tasted like buttered popcorn. Very cool to know why 👌

I picked up their Pinot Noir finished bourbon at a fair last summer, and it's tasty. It's not life-changing, but as a Norwegian popping by PA and wanting something special and local? It hit the spot very nicely.

From what I'm told, rye contains some of the enzymes that convert starches to sugars. So if there's a larger proportion of rye in the mash it might just be enough for them to skip the malted barley entirely without adding alpha amylase.

Hello you beautiful Bastards! A short while back I found a new note in Buffalo Trace that I could not before. So, backstory: a family member celebrated the big 4 - 0 and at the reception offered Buffalo Trace as his whisky of choice, also one of the desserts was a banana, toffee pie with Graham cracker base. Why mention the pie? It's because of that pie I can not escape a note of overripe banana in Buffalo Trace and I mean like the peel turned black and it's barely edible. The note isn't bad or off-putting, I just never found there before. I've had it in a few different rum brands that I've tried but never in a whisky. Thank you for a awesome show gentlemen and to everyone in this community I wish a better tomorrow, no mater how good or bad today have been may tomorrow be a better day. Cheers ye' bastards!

I'm thinking you're talking about *surface tension* w/the clinging drip. The *meniscus* is a c-shaped pad of cartilage in the knee that acts as a shock absorber

Are you sure they didn't malt the rye? That works, too. Coincidentally, you should always specify barley instead of just saying "malt" when referring to malted barley, IMHO. Cheers!

@@wasabista1613 Barley is the implied grain when people just say "malt", but you can theoretically malt any grain and use that to source the enzyme needed to convert the grain starch into sugar for fermentation. Barley works the best for that, which is why it's almost always used. However, there are some 100% ryes out there where a portion of the rye is malted for this purpose. I've also heard of 100% corn whiskies that do the same.

Does anyone know of a whiskey where that buttered popcorn note shows up to the point of fault? I just can't imagine that flavor ruining a spirit. Many American whiskeys already contain corn and it shows up in the flavor profile as a nutty sweetness and Lord knows my fat ass loves butter.

The word is NOT meniscus. It's surface tension. A meniscus is the bottom point of the curve, created by surface tension, of a liquid in a cylinder

The Merriam Webster entry shows a few definitions. The Greek root word refers to a moon shape (crescent) meniscus 1: a crescent or crescent-shaped body 2: a concavo-convex lens 3: the curved upper surface of a column of liquid 4: a fibrous cartilage within a joint especially of the knee

However, I went back and listened to the sentence in question, and it isn't totally clear whether DW is talking about the cause (surface tension) or the effect (meniscus shape and associated behavior). You are certainly correct that the effect is not caused by the miniscus. When I first listened, I heard something similar to the idea of, "It's similar to the effect that we know as miniscus." Listening again, I would say the original sentence is poorly worded, and not one that I would want to argue about. You are not wrong.
