Fugazza and Fugazzeta are two delicious focaccia-like pizzas popular in Argentina. These pizzas have a soft airy crust, topped with sweet cooked onions and sprinkled with oregano. The Fugazzeta it's also topped with Muzzarella cheese.
INGREDIENTS:
For the Pizza Dough
500 gr all purpose flour
300 ml warm water
5 gr active dry yeast
6 gr (1 Tsp) salt
1 tsp sugar
2 Tsp sunflower oil
Toppings:
4 large onions (500 kg)
200 gr Muzzarella cheese (for the Fugazzeta)
dry oregano
ground black pepper
coarse salt or sea salt
olive oil
Method:
1) Put warm water in a small bowl and sprinkle with yeast, sugar and 1 tablespoon of flour. Mix and let stand 5 to 10 minutes, until mixture is bubbly.
2) Mix 1 teaspoon of salt with the remainig flour, place it on the table and make a hole in the center. Add the yeast and water mixture along with 2 tablespoons of oil and gradually begin mixing in the flour. The mixture should come together as a smooth, elastic dough. Put it in a bowl and let it rise until it doubles in size.
3) Meanwhile, cut the onions into strips, cook until just tender and set aside.
4) Divide the leavened dough in half and form a bun with each part. Let rest for a few minutes and spread them out on two lightly oiled pizza pans.
5) For the first option, the "Fugazza", spread half the onions on one of the pizzas, sprinkle with dry oregano and season with salt. Drizzle with olive oil.
6) For the second option, the "Fugazzeta", cover the surface of the pizza with the rest of the onions, season with salt and pepper and spread the grated mozzarella cheese on top. Sprinkle with dry oregano and drizzle with olive oil.
7) Bake in a preheated oven at 180º C for 20 minutes or until the onions are lightly browned and the cheese is melted. Serve the "Fugazzeta" (pizza with onion and cheese) with green olives" and enjoy.
