I’m trying this recipe. What I noticed is that it wasn’t as wet as your recipe. All I had was bread flour so I used that instead. Hopefully it comes out good. It smells good I know that. I noticed that it didn’t rise as much as I thought to, no big deal some breads rise better than others. The bread flour has a higher protein content so it should be still good. I’ll let you know how it comes out when It comes out of the oven. I usually don’t trust video recipes because they never come out good but your looked like it would be good so I’m trying it. Update: came out really good!!!!😂👍🏽👏🏽

Sooo I didnt have eggs but had already started and substituted the eggs with 1 ripe banana. The batter was more loose than shown in the video. This resulted with an over flow of batter spilling to the bottom of my oven and an aroma of burnt batter (not fun to clean) however, the carrot loaf was so light, fluffy and exquisite. Absolutely, happy to have tried it. Will make it again. ***Funny story: My daughter asked for more carrot cake after eating 3 servings. Unknownly, she finished it. I replied "you know you finished it". She was surprised 😮 "really" she said. I replied "yes! I gave you 3 fat servings that last slice was the last piece". She is 12. Lol

I have not baked a cake in a long time but I had some carrot pulp from juicing and decided to look for a recipe to bake a carrot cake. I followed the recipe except that I used 3/4 cup sugar and no baking soda cos I had none. I added another 1/2 of baking powder. The cake came out beautifully. Best carrot cake I have baked. I still found it too sweet so I will use 1/2 cup sugar next time. Otherwise, thank you so much for this recipe.

sour cream and yogurt are definitely your best options. i’m not sure about anything else. you can try cream cheese maybe and loosen it up with a little bit of milk to kind of give the consistency that sour cream and yogurt have. let me know how it turns out if you make it :)
