Peter Franzen lul, but it’s very easy to mess up if you’re not used to cooking shellfish. I had a friend that would always over cook his shrimp and lobster to the point where it became very rubbery. Most people are very worried about undercooking it and getting food poisoning... but yeah that guy was just dumb though.

At 3:53 he sticks his finger in the sauce and then places his finger in his mouth to taste for salt. Then just few a seconds later at 4:06 he uses the same finger to place the meat in the ramekin. Isn't that contamination?

blackgaydude - there is no excuse for his fingers in the food, and then putting his fingers in his mouth. Then he picks up the lobster and touches everything else. Sorry, I've cooked for over 39 years, there's NO excuse for laziness. He should have used a tasting spoon. Laziness leads to very sick people or worse. I don't condone his cooking habits at all. Poor cooking skills as far as I'm concerned. I wouldn't eat ANYTHING he served.

"He licked his finger and then touched their food!" Which was then cooked in an oven at 500 degrees. So it's both vaporized and sterilized. If you've let a steak come up to room temperature before cooking, you're at higher risk than this, you twits. Oh, and he's on a TV time clock and can't stop to wash his hands or use tasting spoons every five seconds. If he were in one of his restaurant kitchens, I'm sure it would be very different.

He tasted twice , the first time off the back of the wooden spoon. The next one was on the ladle of the wooden spoon, with his right hand. He added more salt with his left hand. The video also cuts away and you don't see him all the time as he is talking. He may have washed his hands then. He most definetly wiped them off with a a kitchen towel once or twice . If your so worried about a little taste test. Why would you not be concerned about a chefs hat to cover his hair to prevent hair from falling onto the food. And also the high temp inside the oven probably eliminates that little taste test and distributing the lobster into the dishes. LIGHTEN UP PEOPLE. We just went thru 3 years of covid with masks and all the other bullshit. I don't think Emeril's little taste test finger is going to be a problem.

Everything is simple when you leave out all the labor that went into poaching the lobster then reducing down all the liquid. Same as when you leave out all the time it takes to make veal stock for a dish. Not complaining but there is sometimes days of prep work that goes into these complex dishes that is left out.
