One of my favorite things about this channel is how accessible it's stayed over the years, I feel like a lot of other popular home cooking youtubers have become unnecessarily chef-y and a bit pretentious but your videos are always so relatable and down to earth.

yeah she still seems like a food youtuber and not a food network show, but doesnt skimp on the camera and editing quality. And her backdrop has definitely gotten more aesthetically pleasing over the years!

Absolutely agree. Everyone tends to “go Hollywood” after a while. Moving to LA, getting fancy studios, etc. Don’t get me wrong, good for them, but as you said, Emmy has just stayed relatable after all these years.

A good thing to do with a large zucchini is to slice it in half, scoop out the seeds, and stuff it with Italian sausage, bread crumbs, cheese, and some other seasonings, and then bake it at 350° until soft and browned on top. 😋

I've heard of using zucchini to replace the shortening in cakes before, especially chocolate cakes. Made a chocolate mint cake that way for my parent's anniversary a few years back. They loved it. No one noticed the zucchini.

I LOVE zucchini. It's my favorite veggie. It's mild in flavor and would be delish to use in a cake instead of carrots. Do you like red velvet cake? I love it. But, it has a lot of red food coloring though. I've been wanting to replace it with beet juice. People say you can't taste the beets at all. Plus, they're good for cleansing our liver. Since you experiment using veggies in desserts, have you tried using beet juice?

@@pattymorriello586 Mayo cakes are yummy. Especially in chocolate cakes. I even make mayo muffins or biscuits. Self rising flour, mayo and a little milk or water to thin it out a little. It makes them light, fluffy and tender. I don't know why some people turn their nose up at the thought of mayo in cakes. Mayo is mainly eggs and oil, the exact ingredients we put in cakes anyway. I've heard of using black beans in brownies. And, if we can't taste them, I think it's a great way to get some nutrition in such a decadent dessert.

I was a Director of a day care center with 120 kids when I had a huge crop of zucchini from my home garden. Luckily I had a fantastic cook who made tons of zucchini bread with cinnamon spices and a chocolate zucchini cake that the kids loved! She used so much zucchini in them that they actually legally counted as a serving of vegetable! She also made a summer vegetable side, basically using whatever I brought in, with zucchini summer squash tomatoes carrots etc.

I’ve been making zucchini brownies for years. You can also make them into cupcakes. Zucchini bread is also yummy. I freeze the grated zucchini in two cup pouches.

Choko is a perfect vegetable for mock apple, the texture holds up a lot better than zucchini. Choko vines are incredibly prolific too.

My zucchini brownie recipe is very different, and it is a family favorite, so I am sharing. Zucchini Brownies 1/2 cup soft butter 1/2 cup cooking oil 1 3/4 cup sugar 2 eggs 1 tsp vanilla 1/2 cup sour milk 2 1/2 cups flour 4 Tbsp cocoa powder 1 tsp baking soda 1/2 tsp ground cloves 1/2 tsp salt 2 cups finely chopped zucchini (not blended!) 1/4 cup mini chocolate chips (semi sweet is what I use.) 1/4 cup finely chopped nuts Cream together butter and sugar, add eggs, vanilla, and sour milk. Sift in flour, cocoa powder, baking soda, and spices. Stir. Fold in zucchini pieces. Pour into a greased and floured 9x13x2 pan. Sprinkle tops with nuts and chocolate chips. Bake in preheated 325° oven for 45 minutes. These are more cakey, but very moist and almost a spice cake.

With the brownies, you get 2 servings of vegetables. Zucchini, and cocoa powder is from the cocoa bean, and beans are a vegetable, so... 😁 And grain from the flour for carbs, and egg is the protein, so IMO, each serving (maybe a quarter of the pan? 😁) would be a balanced meal, wouldn't it? 😆

One of my favourite ways to use up excess zucchini (especially ones that have gotten huge like these) is in...pretty much any dessert recipe that calls for chopped apples, I guess? I've made "apple" pie, crisp & cobbler with them! If you want it to REALLY be stealth, peel & seed the squash first! I usually toss the sliced/cubed squash with some cinnamon & sugar & a bit of lemon juice (like, with whatever is called for in the recipe you're using), and sometimes I add a splash of apple juice if I happen to have some, and let it marinate for a bit before assembling the dish. The BEST part though, is making it with kids, who are astonished that it tastes just like apple pie, and THEN helping them 'trick' their parents with some, hahaha. The look on a 5 year old's face when he or she finally can't hold the secret in anymore and blurts out "IT'S ZUCCHINI! THERE ISN'T EVEN ANY APPLES IN AT ALL!" is *priceless*! 😂

That zucchini brings back fond memories of my grandpa and the first time I cooked. He taught me to season flour, how to make an egg bath, and we cut that zucchini into slices and battered it in egg and flower and fried it in oil and repeated until it was all cooked. Still make it on occasion as it is so tasty.

Zucchini makes a really great parmesian. It's not as tender as eggplant but it's also doesn't require all the prep that eggplant does. It's pretty much just good to go.

If you run out of ways to use zucchini, an old fashioned English recipe (probably 'hard times') is marrow and ginger jam where a marrow was/is a variety of summer squash. I have used overgrown zucchini to make it. The zucchini, which has hardly any taste, is flavoured by the ginger and it's delicious. I also made a small batch using rose scented geranium leaves, beautiful!

Yeah when we would do a garden those suckers would grow and multiple like crazy! We made lots of zucchini bread,muffins and fried tons too. We'd also shred it and then freeze it so we could make bread with it in the winter. Even still we'd usually have to give a bunch away because there was just so much. But it's always nice to get to share with others. Never heard of using it in brownies though!

Those zucchini are fabulous! When my husband and I started growing our eggplant-sized zucchini we found a recipe for zucchini fritters that we make essentially as a substitute to chicken or eggplant parm and pair it with pasta and garlic bread. It's delicious and uses a ton of shredded zucchini. The juice you squeeze out makes the compost happy too! You should try making zucchini fritters. I think you'd enjoy them.

Hi Emmy! When I looked at the printed recipe on your web site, the butter is missing from it - good thing I paid attention to your video! I made a few swaps with mine - didn’ t have espresso power, so I used a T. of Kahlua (yes!), and added a 1/2 c. or so of walnuts, plus another couple T. of flour. The flour made the batter a tiny bit thicker, and the brownies were still very moist. Thanks for sharing your recipe, and as always, I really enjoy your videos!

Emmy, I made carrot cake muffins with shredded zucchini. The shreds disappeared in the baked muffins. I also squeezed the water out of the zucchini before I put it in the batter. They were moist and very good. You could not even tell the zucchini was in there, at all.

I tried this recipe yesterday. As you mentioned at 9:07 it does taste a bit cake like. I personally would consider this recipe to be more like a cake than a brownie. With that being said it is absolutely delicious! I would definitely make it again and it's a great way to use up extra zucchini. It's definately better tasting than a lot of recipes I've tried and definitely better than chocolate box mix. This will be my go to recipe for the summer when I'm swimming in zucchini. Thanks Emmy!

If we had overgrown courgettes, we treated them like marrows. Usually, we stuffed them but I remember, years ago, I used one to help my apple go further when making apple sauce. Sshh. The family still don't know.

I'm curious,are you guys a frosting or no frosting when it comes to brownies? Growing up we never did frosting and I didn't even know people did til I was probably a teenager. I personally prefer no frosting as the brownie is rich and moist all on it's own I don't think it needs anything added to it. But I know it's an essential for some people.

I really hate commenting with warnings, but if your zucchini are this big, especially with the US heat waves, taste a little bit before you do anything with it. If it the taste is bitter, they are poisonous because of their curcubitacine (?) levels. That poison can be lethal. The poison has been mostly bred out of industrially grown zucchini, but it can sometimes occur in homegrown zucchini, e.g. because of cross-breeding or heatwave growth spurts. The brownies look so amazing and I hugely enjoyed the video! I just want you to take care. ❤❤❤

I don't think people need to worry. The worst that could happen with homegrown zucchini would be a bit of a stomachache. (And the brownies would be very bitter.) The few reported cases of poisoning in the US have been from eating wild gourds, or from hybrids of wild gourds and squash.

@@allisonferry-abee8693 In Germany there was a case of an older couple that received home-grown zucchini from a neighbour that were bitter. The couple was of the post-WWII generation that doesn't waste food. They made a casserole and the wife stopped eating but the husband ate up the entire portion. He died pretty horribly, his wife survived. It had been a hot summer in which zucchini had the exact growth spurts. It is very rare, but it happens, especially with people who hate wasting food and thinking a little unusual taste won't kill them. I am mentioning it because it is very easily avoidable.

i absolutely LOVE making mock quick pickle zucchinis. you slice them lengthwise on a mandolin and put them in a sealed jar with a mix of olive oil, vinegar, minced garlic, salt, and whatever herbs you like. then leave it overnight and it's an amazing addition to a salad or on crusty bread

These look delicious, and I would totally make them if I had a garden with giant zucchini. My favorite brownie recipe features berries (blackberries or boysenberries) spread over the top and pressed lightly into the batter before baking. Fruit and chocolate!

Costco sells zucchini-based muffins in various flavors: carrot, blueberry, chocolate, etc in their freezer section, which I often eat with my breakfast. All of them Are 'Da Bomb'!

Zucchini makes an amazing lemon drizzle cake too. My lovely neighbour is always baking for us and she made us one, I think she grates the zucchini, though 🤔. The brownies look delicious 😋. If you want to make it even healthier, store them on a high shelf - it's a well known fact that calories are frightened of heights and will jump out of any food left on a high shelf. 😉 😄

Emmy, I absolutely adore how you always include the chemistry of baking in your videos. 💕 Years ago; before I went to culinary school (I’m a pastry chef), I entered a baking contest at a local fair. There were several categories, but the one I most wanted to enter and win was an original recipe bake off. I (and all the other potential contestants) had to submit an original recipe I’d developed on my own. Then I had to take a sample of the baked good to the 4H committee a week before the contest. (All of the agricultural contests were run by the local 4H). If you were accepted, the committee would decide in which category your baked good belonged and notify the accepted recipients. I won the blue ribbon for my category! Yes this is relevant to your video...😂🤣 I developed a chocolate cake recipe that revolved around using molecular gastronomy, which at the time was a brand new concept, yep I’m that old. 😆 Anyway, while developing my recipe I came to the conclusion that I absolutely could not use Dutch processed cocoa powder. It took me FOUR sunken in the middle and half baked cakes to finally realize my mistake. Trial and error since I wasn’t lucky enough to have an “Emmy” at my fingertips back in the day. ✌🏻😆😊

I love zucchini bread. I’ve tried one local bakery’s version of a brownie. The texture was different but I enjoyed it- especially since it was gluten free.

Zucchini are the perfect ingredient! Condiment, appetitizer, main dish, side dishes and dessert can be made from them! My Pap made zucchini pie that tasted like the best apple pie!

Two of my favourite recipes for using finely-grated zucchini (and carrot) are lasagne (zucchini and carrot cooked with the tomato to make the sauce, after the meat has browned) and pork (and veggie) meatballs. My family like both of these recipes. (-:

I have 8 zucchini plants, I have way too much in my house so I'm glad you posted this. I've been making it into zucchini bread but there's only so much of that you can eat lol definetly going to try this recipe!

Google Anne Willian's Tian de Courgette recipe, it's a zucchini Gratin but I cut out 1 egg and top it with herbed breadcrumbs I've made for years now favourite summer recipe. Great as leftovers....

Conversion Tip: You can use Dutch-processed cocoa powder with baking soda, so long as you switch out the milk in the recipe with buttermilk. Alternately, you could switch out a tablespoon of the liquid with orange juice, which not only reacts with the soda, but goes great with the chocolate, too.

You can make zucchini bread Or cut them in half lengthwise and scoop them out and stuff with your liking. Bake. Delicious

Yummy! Definitely going to try this one! Mu kiddos love zucchini cooked anyway possible. I have about 5 zucchini plants in my garden this year, 3 green (2 different varieties of the green), and 2 yellow ones. So far we haven't got much this year like we usually do. Think it's time to put some fertilizer in there next year.
