@@lornahuddleston1453 when you take the pancake part of the blintz out of the pan, yes you've cooked it on one side only. But then you put your filling on the cooked side, wrap it into a neat package with the uncooked side on the outside, and fry it in a pan. So both sides end up being cooked.

Emmy, for added flavor and better texture, I add about a table spoon or two of instant mashed potato flakes or buds and/or some finely shredded mozzarella cheese, and add the olive into the batter, with seasonings, does add carbs, but not gluten as far as I know? Then I spread it thinner on a baking sheet with parchment paper and and bake until golden brown in a 420 degree fahrenheit oven, makes a nice sandwich, or can be cut into strips and reheated and eaten like french fries.

Using round pancakes you end up with very thin ends and thicker middles to the rolled pancakes. You said about your problem with wheat. If you are OK with eggs, oranges and almonds one recipe that we like is Nigella Lawson's clementine cake. This is very similar to a very early version of bread common amongst Celtic peoples. Use the same process with the cabbage / egg. Add nuts (any nut will do, although acorn was most common if well leached) which has been ground into meal. And mix the product into a stiff pastry. Follow exactly the same process as Emmy, but the addition of cooking oil is not necessary. The bread is completely gluten free, and using some types of nuts make the bread very keto friendly.
@Minyassa2 ай бұрын
Do acorns have a lot of fat in them? I haven't successfully tried them yet--my crop was ALL wormy last year, going to try again.
@markedwards92472 ай бұрын
@@Minyassa Yep. You have to get to the kernel at the centre of the acorn. For that remove all of the outer shell and fibrous material surrounding the nut itself. It is about half the size of the full acorn at the centre. It has to be well leached because it contains a lot of bitter testing tanins. Grind the nut to a powder, and rinse several times in fresh water. Leave to dry and you will be left with an acorn flour. Most ancient cultures in the northern hemisphere used this flour a lot, which is why the oak tree was often sacred to them. A mature oak tree can produce around 1,000 pounds of acorns per year, resulting in about 300 pounds of acorn flour.
