Today, we had Chef Hatagawa from Chugokusai feve. in Osaka to show us how to make double-cooked pork with Akita ingredients.
- Ingredients (for 2 servings)
250g pork belly block
3 Manganji pepper
1/2 leek
2 garlic leaves (80g)
2 tsp douchi
10g sliced garlic
[Pork marinade]
2.5g salt (1% to the pork weight)
3 tbsp rice shochu
pepper
scallion and garlic pieces
[Seasonings for frying]
1.5 tbsp doubanjiang
2 tsp tianmianjiang
1 tbsp jiuniang
1.5 tbsp rice shochu
2 tsp soy sauce
1 tbsp soup
starch dissolved in water
1 tbsp red chili oil
