There is no 'best brand'. You need to choose the brad that suits your needs in terms of how often you use it and how much it costs. Most important for rising the dough is a consistent warm temperature. For an inexperienced person baking can be difficult, best is to simply follow the recipe and try many different recipes. Over time you will gain experience and know better. The dough consistency can vary depending what kind of flour you use, even the brand of flour can influence consistency. Therefore best way is to look at the video and try to achieve similar consistency according to the looks of the dough - if your dough looks dry, add water - if your dough looks wet, add flour. How chewy/dry/fluffy your bread is depends on many thing - kind of flour (high or low gluten), how much kneading was done, ratio of yeast to flour to water or sourdough starter to flour to water. As you see...you have many questions and in baking there is not always a definite answer. Baking needs experience and time. That's the best way to learn.

Hey Janet. I don't eat pancakes or cheese every day. 😉 Over the whole week I will try to eat a balanced diet with lots of vegetables, some proteins and some carbs. Also I allow myself an acceptable amount of fat and sugar, but not every day. Additionally, I walk my dogs every day plus do fitness 2-3 times a week. A happy and healthy life does not only know a black and white diet. You can enjoy anything you like as long as you do so in moderation. 😊
