‪@ChateauLove‬ Spring is in the air & Easter is here! The latest French lockdown is in full force, but that won't stop Simon, Isabella & Vivienne from making the most of the sunshine & Easter spirit. Using blue & white porcelain as inspiration, the family paints distinctive Easter eggs. The flower beds continue from last week, whilst Simon undertakes the veranda glass replacements. Plant buying is a sentimental affair, & Elvis is alive and well. Simon learns how to make Vivienne's decadent carrot cake. Vivienne's Parisian friend Kristina shows us all how to embrace French chic on a bicycle. Easter is all about new beginnings, but new diets will have to wait until the French Easter desserts have been truly appreciated. Did someone say "truffle cheese"?

I’m Vivienne, the châtelaine of a small 19th century neo-Renaissance castle in the Loire Valley of France, which I share with my delightful (and wonderfully funny!) husband, Simon, our teenage daughter, pets, & -whenever possible- lovely friends & family. CHATEAU CARROT CAKE!
YIELD 1 (9-inch/23 cm) layer cake or 1 (9- by 13-inch/33 x 23 cm) sheet cake
Cooking Time 45 minutes
Total Prep Time: 1 - 2 hrs
INGREDIENTS
* Carrot cake:
* 2 tablespoons butter, for greasing the pans
* 4 cups unbleached all-purpose or wholewheat flour
* 2 teaspoons baking powder
* 1.5 teaspoons baking soda
* 1.5 teaspoons fine sea salt or table salt
* 4 teaspoons ground cinnamon
* 1 teaspoon freshly grated nutmeg
* 1/2 teaspoon ground cloves
* 2.5 cups packed light brown sugar
* 1 cup dark brown sugar
* 8 large eggs, at room temperature
* 1 cup quality vegetable oil
* 1/2 cup coconut oil
* 1/2 cup melted butter
* 2 pounds (1 kg) carrots, trimmed, peeled, and coarsely grated on the largest holes of a box grater or the fine grating blade of food processor
* 1 cup finely chopped golden raisins
* 1/8 cup finely chopped candied ginger
* Chopped zest 1/2 orange
* OPTIONAL: chopped walnuts or pecans
* CREAM CHEESE FROSTING:
* 3 (8-ounce) packages cream cheese (like Philadelphia) or 2 (300 g format familiale St. Moret)
* 11 tablespoons salted butter, softened at room temperature
* 3 cups confectioners'/icing sugar, sifted after measuring
* 1 tablespoon pure vanilla extract or vanilla pod
* Chopped zest of medium orange
* Combine the cream cheese and butter and beat on medium until smooth, 30 seconds to 1 minute. Shut off the mixer and scrape down the bowl and paddle. Add the confectioners' sugar and vanilla, and beat on medium, scraping down the bowl and paddle as necessary, until light and fluffy, about 2 minutes.
PREPARATION:
* Position two racks in the middle of the oven and preheat to 375*F/190*C
* Oil/butter the bottom and sides of 2 (9-inch-round, 2-inch-deep) cake pans and line the bottoms with parchment paper.
* In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
* In the bowl of a stand mixer fitted with the paddle attachment or using a hand mixer, mix the brown sugar on the lowest speed to break up any lumps. Add 1 egg and continue to mix on low until smooth and incorporated. Add the remaining eggs, one at a time, and mix on low until smooth and incorporated. Shut off the mixer and scrape down the bowl and paddle. Return the mixer to low then add the oil in a thin steady stream and continue to beat until fully incorporated. A hand mixer may also be used.
* Add the flour mixture in 3 batches, using a large rubber spatula to fold the mixture together until just incorporated. Fold in the carrots & raisins (nuts such as an chopped walnuts or pecans may also be added).
Divide the batter between the prepared pans and smooth the tops. Bake until the layers are firm and risen & the tip of a paring knife inserted in the center of the cake emerges clean, about 40 minutes. Transfer to a wire rack to let cool for 5 minutes then invert the cake layers onto the rack & peel off the parchment paper. Use another rack or a large plate to invert the cake layers again then slide them back on to the rack so they are right side up. Let the cake layers cool completely. DO AHEAD: The cakes can be baked ahead, cooled, wrapped in a double layer of plastic wrap, & refrigerated for up to 2 days, or frozen up to 1 month.
Frost when fully cooled.

My goodness what a beautiful artist you are I was watching you sketch the bedroom to make the hanging thing over the bed I can't remember what you called it and I could not believe how well you just sketch that out so I shouldn't be surprised about these beautiful blue eggs. Oh my goodness, that is so lovely what they do at that garden center for people that work there I think that is absolutely fantastic other businesses should do stuff like that. I also watch another show the Positano diaries in Italy and they have a lot of these caves with figurines in them and at Christmas time it is absolutely beautiful. I saw you Simon putting the dirt back into the garden when you were sweeping up and I thought to myself what a nice man. Every setback has a plus side. As you were only able to use plastic eggs, you now have eggs you can keep for next year. How beautiful they turned out! If you have only brown eggs, you can still use them, first give them a white base coat, let dry and then paint the design. Make sure your brushes are not too wet, as that would make the base paint run.

Thank you for sharing - my favourite loved the addition of crystallized ginger. I add a piece of crystallized ginger in my homemade bran muffins, so good when you bite into it. Keep up the fabulous vlogs - great for armchair travellers.

Although I am Canadian, my heritage is half Ukrainian and half Welsh... at Easter my Ukrainian Nana always created beautiful pysanky (painted Easter eggs) and she taught my siblings and I how to do it. I even taught my cousins from the Welsh side of the family. For many years, until COVID hit, it has been my extended family's tradition to make Pysanky together around the kitchen table. My girls love homemade carrot cake as well. I haven't tried the orange zest in the icing or the candied fruit. However, I include chopped pecans or walnuts in both the cake and icing. I'll try yours next time they're home.❤

.Simon, that peeler swivels. If you lay it flat along the carrot and run it back and forth it will peel in both directions While you are doing that turn the carrot in your left hand as you do so presenting more skin. You can do the bottom half of the carrot and then turn it round and do the top - its so fast!

To keep your terrace clean while working on the beds, just put a jute bag on the side to step on when you step on to the terrace and wipe/stamp your feet. You can later pick up the bag and put the soil back into the flowerbed. Do you have a wood chipper? Use woodchips in the beds to keep the weeds at bay.

Carrot cake looks fabulous, I’ve never had it with the ginger, but I would imagine it adds be Enormously to the taste. I would miss the pecans in the frosting; however. Love your vlogs! Keep it up.

Again, a wonderful vlog and that cake!!!! Your eggs are beautiful. I just love blue and white. I live at the beach and my house is decorated in blue and white. Because I don't care for fall colors I paint plastic pumpkins of different shapes and sizes white then decorate them by painting sea creatures such as sea turtles, crabs, and sea horses all in shades of blues. I add a few with coral and some just plain gold. Then pile them in a large wicker tray and place them on my kitchen island. Others I place in a large basket on my front porch.

For your plantings, a suggestion, add some t-olive schrubs near each opening and corners. They are ever greens, can be shaped in endless ways, and have the most beautiful smell from tiny minute blooms around 4 times per year with very, very little cleanup. I have surrounded our over 100 year old southern estate home with them and in the spring and fall, with windows open, they fill the house with the most glorious smell. Mine of course are topiary shaped. They are one of my favorite evergreens. I also added them through out the gardens surrounding the house to always be able to get the fragrance with each blooming.

Over here it is called “Osmanthus”, and I believe we may already have a couple, without knowing what they were. Now hopefully the garden center will have them (or order them) for us! 💖🌸💖

I use Eason salts on the Rose’s every spring. Just use a large headed screwdriver about 3” from the root, push down in the dirt 3-4” and pour in the Epson salt. That’s it! Creates a healthier plant, more blooms.

Thank you for sharing you recipe!! What a great garden center with a great mission! I live on the other side of TN! East TN here! I'm ready to get planting, but the low temps are still lingering! I love the idea of painting faux eggs! That way we can use them to decorate every year! I don't have small children any more 😟 that want to dye eggs! Love your Easter decorations! Oh funny you only have one piece of Spode, I just got my first piece for Christmas! I've just started collecting blue and white china and they are by other makers 😊

@@ChateauLove I helped a dear American friend living in the Cussay area of France pull off her daughter's wedding about ten years ago! As my friend had been back in the US for about a year for medical issues, she and hubs had arrived back at their home with just 10 days to get EVERYTHING ready for the wedding! They hired a local group of disabled (actually very abled young men) to give the entire grounds and courtyard a good trim and cleanout! They were brilliant and talented young adults and I think they return a couple of times a year just to make things tidy! Such organizations should be applauded!

@@ChateauLove I kind of made that connection :) I am in Canada and our carrots are sold by the kg. My mom's recipe calls for about 4 cups, which translates to just about the same. It's early am so I won't be starting for about an hour because I am using the food processor. Thanks for making sure that was clear.

Nothing at all wrong with going “old school.” I’d just like to know the approximate amount of carrots in cups. It looks to be about 4 cups, but perhaps I’m way off the mark and it’s more than that. It’s rare for me to find such large carrots, living in close proximity to NYC.

Yes, this episode was filmed mostly in the kitchen, which is also a similar space. It doesn’t have as much glass as the orangery, but also has a tiled floor. Well spotted! 💖
