We challenged chefs of three different skill levels - amateur Onika, home cook Gabrielle, and professional chef Frank Proto from The Institute Of Culinary Education - to make us their favorite ravioli. Once each level of chef had served up their creation, we asked expert food scientist Rose to explain the choices each made along the way - both good and bad. Which level of ravioli are you digging into first?

One thing I really love about these videos is that no cooking style is criticized. They all have their purpose and place. And when the food scientist goes over everything, they always talk about why things work. These videos are meant to teach, not to criticize.

I feel the same. For years I've been fascinated at how my friends and family seem to have pasta in their houses, and every time I asked them what the secret is it always seemed like this long complicated story about driving to the grocery store, "buying" something, I don't know, something about a cashier... But finally I feel like I understand it after Onika explained everything. 😄

my favorite part of theses videos is that no matter what level the chef is, they're always happy with what they made! i think that's the best part of cooking; making something and stepping back to think "wow, i made this!" and getting to enjoy your hard work!

One thing I love most about this series is that the level 1 chefs still make a great looking plate, which is perfect for those of us who accept our mediocrity in the kitchen and it gives us a nice, realistic goal to aspire to. Keep up the good work epicurios!

Gabrielle throwing shade at the pasta maker was one of the best parts of this video 😂. Her dish looked so good and homey ! You already know Frank’s dish was over the top perfection … but you’ll never be able to nail it at home lol Well Onika’s dish 😂 love the effort haha she gets the points for not using pre-made ravioli that you just boil as most of us do.

All three of them have immaculate vibes! They’re all so peaceful and beautiful people. All three recipes may be different but amazing in their own way! I love Onika’s no stress way, immaculate! Gabrielle’s way is so peppy and fun! And of course, Frank is amazing as well! Awesome job all of them!

Frank describing how he invented salt : I was there 3000 years ago. I was searching for food by the great Atlantic by the cost of Morocco . As was laying on the shore after a long walk as the ocean splattered water on my body . As the water splashed on my body like mallet on a drum . The water entered my mouth . I sensed a unique but slightly plesent sensation on the tip of my tounge I was in great curiosity to deeply understand this feeling so I filled my bottle with the ocean water and went to my shelter . Onika is a great addition! I wish she and Emily could do an episode together. Then add Lorenzo and Julie. Top it off with Frank reading his chickens bedtime stories so the eggs are made with more love to be extra delicious and Saul just being fantastic…. I know that’s twice the limit, but that would be just too amazing. But really they are all great! - Gabby, is so creative.

I think it would be pretty interesting to have a blind judging at the end - the judge doesn't know which is the level 1/2/3 chef's food.

Nope. Made Frank's recipe for my girlfriend for lunch- couldn't find duck eggs though- and it was quite easy. Duck confit here is easy to find and nettles are everywhere too.

I think the "it's done when it floats" thing comes from cooking gnocchi, where often they are done once they float due to taking on enough water.

Onika's use of lasagna noodles is creative. I think I'm going to try that, but make a few adjustments. First I'll only boil the lasagna noodles once and then after putting the filling in and cutting them into squares, I'll sautee the ravioli with sliced cherry tomatoes, minced garlic, salt, pepper, spinach and top with cheese. I'll try that or maybe breading and frying the ravioli and serve it with a marinara dipping sauce.

Had a delivery disaster at the restaurant once and the chef ended up using wonton wrappers. All the guests complimented the ravioli so much we've just done it that way ever since. 🤭

They have pasta makers that will make pasta from scratch and exude it in the shape programmed. Using pasta roller is normal.

Agreed. It's not just pasta machines - there is an entire arsenal of tools used for making pasta of different shapes, sizes, and consistencies. A pasta machine is one of the staples in any professional kitchen, that emphasises speed and consistency above anything else. This is a first for me though, seeing Chef Frank use an electric pasta machine - I believe he's used a hand-crank variant before on the channel.

Guys, i think I know why Frank is finally back. He completed his preparations for the 3levels in growing his own vegetables and raising his own own meat. So after his reserves are used up he'll be gone again. Or he'll just go back to his own channel and tease us with the star wars spoon.

Happy to see Frank using the KitchenAid attachment. I helped make ravioli for several hundred people once and we had ONE hand roller and 2 molds that made 10 pieces at a time.
