I just received your ESEE 4 with the black heavy coating for my birthday. The more I handle it the more I like it. Should I strip the blade before I use it for food preparation like cutting fruits and meats? If so what should I use on the blade to help protect it rust? Please help .

no coating is "Food Safe" according to the FDA...there are TONS of videos on youtube that will show you how to strip it and you might look up a "forced patina" to help minimize corrosion. A light coat of any type of oil will help as well.

Love all my esee knives but wish they had 90 degree spine out of the gate.

if we put 90* spines on all we'd have an equal amount of people complaining about it bc they use their thumb on the spine for some cuts. So we we use the 90* spines where we feel they are applicable the most given the design of the knife.

Throw an esee knife under a lawn mower and send it to them they'll send you a new one with a note asking what kind of damage did it do to the mower.
