He’s right about simplicity. Many dishes in Puglia couldn’t be simpler, made with only 3 ingredients, but what ingredients! The same is true of buildings constructed in pietra leccese, a simple wall in sunlight looks stunning. Italy has done the work for you, no need to do more.
