I'm from the north, NY/NJ, Italian heritage and we love our greens. I learned to cook collards the southern way when I relocated to Atlanta, but now my housemate who has Congestive Heart Failure is severely salt restricted. I've come up with a tasty, low salt recipe that's delish and she can enjoy her collards. This woman is creating a tragic mess ... She needs to be in food jail!
