Appreciate Video! Sorry for butting in, I would love your initial thoughts. Our butcher mentioned that i should use a thermometer to avoid overcooking and he recommended the 'Chef Remi Cooking Thermometer' (I'm sure he said you can buy it on Amazon) Do you use a Chef Remi thermometer? The butcher mentioned its very accurate and has a lifetime guarantee.

Basic kitchen safety is to wash your hands after touching meat. Not to contaminate the oven, grape seed oil bottle, pepper grinder and everything else. Don't focus on teaching people a process if you are going to completely ignore a very simple technique that could prevent a rather unpleasant emergency room visit instead of enjoying a delicious roast.

what was with the cross contamination going on? This guy has to have a record for the belly shits, he keeps handling the shakers and the meat then the shakers and the meat gawd, I don't know how some people even survive, I guess you don't have to be a pro to come on youtube, and the fact he calls himself a chef.....you have to learn about cross contamination and gut bacteria from mishandling meat and other surfaces. he should have poured the seasonings out into a dish and then played with his meat....

You basically spit in the sauce when you placed the spoon back in the sauce after you tasted it. As for safe food handling procedures you get a F. You failed to sear the ends of the roast and this was after saying you pay attention to details. You have the basics right but as for details and safe food handling there is huge room for improvement.
