Just finished cleaning up dishes after making this, here's my review! TL;DR These are incredible, HUGE kudos to Nick for developing and sharing this recipe to the rest of us! So I saw this video last week and immediately knew it's a must try. Being the kitchen dummy I am, I didn't follow the recipe to the letter because of things not available to me/measurement error. Here are the things I did differently: - I cut the recipe in half to save calories (I was already planning to eat oats later but danggg even with just half the recipe, I already feel satiated and don't feel the need to make the oats) - I used brown spelt flour = Not sure if this is totally true but the packaging says it has lower calories and higher protein content than normal AP flour I have available here. Sources I've read online say that spelt is perfectly suitable as a 1:1 substitute for APF so I thought, yeah okay whatever. This led to my pancakes looking more brown and kinda dry (

When I didn't have any eggs I found an old fashioned recipe that uses baking soda and vinegar to fluff the pancakes. They are wonderful after substituting some flour with protein powder. Not as much macro nutrients as eggs and egg whites but when you're out of stock the alternative works well.

I made it tonight, w a bit of modifications: 1. I doubled it 2. I used pea protein + more liquid 3. I didn't use a scale in a bowl: 4 egg yolks (save the whites separately) 10tbsp whole milk 1/2 tsp vanilla 1/4tsp salt 2.5tbsp water in strainer: 5tbsp flour 6tbsp unflavored pea protein 1/2 tsp baking powder whisk to combine well, it will be thick. I used more liquid than recipe calls for bc pea protein absorbs more water, I got it to the right consistency though. in another bowl: 6tbsp powdered sugar (could have probably used 4tbsp) beat egg whites and pour in 1/4 of it at a time while beating (I didn't have cream of tartar) beat until stiff peaks (took me like 7 minutes on high!) mixed just a little bit of meringue into the main batter. combined, barely folding batter into meringue. 20 folds from the bottom (I didn't use a piping bag) cooked very low on a nonstick pan with coconut oil. recipe made 8 (thick daddy) pancakes pour few drops of water into pan and cover to help cook the sides so you can flip them usually about 3-5mins first side, then half that time for second They were sweet, airy, tasty. I didn't even notice it was full of protein powder, especially unflavored powder! Ate without syrup or anything. If going back, I'd remove some sugar & maybe add jam or honey on the finished product. Biggest mistake: I had egg white streaks in the pancake! I'd mix just a little better next time.

@JB23669 can't speak to hungry Jack's pancakes. Not comparable to IHOP. These have way more volume and are much more fluffy. If you cook them for a little less you could get more of a doughy texture I think. Japanese pancakes are the bomb 💣 😋

i just made these and the texture is to die for!! . they have pretty good macros too. i will say these are definitely a weekend breakfast as they took me like an hour start to finish. also recommend when you’re mixing the egg yolk mixture in the beginning use a spatula instead of a whisk because the dough is superrrr sticky and gets inside of the whisk and is a pain to get out. i always struggle with stiff peaks so i gave up after like 10-15 minutes but they still turned out good. i had the heat a bit too low so it was taking eons for the center to cook so i eventually flipped them a second time. i think i might skip the piping bag step and use a slightly higher heat to save time next time.

Just made these and they came out perfect! I wish I could post a picture here. I used a whey protein (all I had, plus casein does not sit well with me 😢), macadamia milk, and an allulose blend instead of swerve. All the measurements were the same. Pro tip: if you're unsure how fresh your eggs are, just submerge them in water. If the egg lays on its side on the bottom, then it's the freshest possible. If it stands up on the bottom, then it's not as fresh, and if it floats, it's probably no good. Also, if you're unsure if an egg has been boiled or not, just spin it and abruptly stop it. If it starts spinning again a little bit, then it's raw, because the inside still has momentum.

For me, cooking protein pancakes daily for the calories and protein fill, the fluff comes from the way you cook it. What works for me, is low heat at the beggining for 2-3 minutes, then when you flip it you imidiately change heat to high and only let it for a minute, the heat change will make it expand it seems.

I should mention that I am atm using ready to mix powder that I stir in a bowl with soy milk, that differs from other recipies but I think the heat switch when flipping doesn't sound that crazy, it transforms them from flat into fluffy ones. I have a question. when you fold in with the spatula its obviously because you want to keep as much air as possible. But Whipping with an electric mixer in the first place is because you want to introduce air in the egg-whites in the first place. The pancake mix was really tasty and fluffy, but I messed it up in the cooking part, my stove was on a low heat and the pancakes would not cook 😩 probably left them for 15 minutes and tried flipping them and they were still raw, I'll try it again with a different heat, but still ate them once they were cooked lol they feel so light but were so filling, I'm impressed with this recipe, I'll try it again, hopefully they'll come out as good as yours! thank you for sharing!

Helps break up clumps, aereates the mixture, and makes for a lighter a fluffier finished product. It isnt necessary, but only takes me an extra 20 seconds so I do it as long as I remember. Lol

My secret to fluffy protein pancakes is to use Kodiak Buttermilk pancake mix! 1/2 c pancake mix + just less than 1/2 c water. Wisk together. The batter should be kind of thick. The thinner the batter, the thinner your pancakes will be. You'll get 2-3 pancakes from this, depending on how big you make them. You can also add an egg and use any kind of milk you like instead of water to make them a little richer. I just use water because they taste amazing without anything extra!

Mother of God. Just made, hands down no comparison, best protein style pancakes ever. And I've been trying for years, just never cared for any recipe. Plus insane macros, I also used Fairlife Milk but the omega whole version. Have to play with timing a bit but hot damn, killer recipe!

The fluffiest pancakes I ever got was replacing eggs with oil and they were surprisingly fluffy and cooked perfectly golden
