México proviene de la palabra náhuatl Mēxihco y su pronunciación era Meshiko en el siglo XVI. Los conquistadores españoles cambiaron "sh" por "x" en el siglo XVII, de dónde surgió la pronunciación con la letra “j”. En España y los Caribeños lo escriben "Méjico" porque así lo enseñan en las escuelas sin la intención de molestar u ofender como algunos piensan...Saludos!.

Mexicans should credit spaniards and moors for the way they shaped their food. Locals did not have chorizos, cattle (they can thank Gregorio de Billalobos for that), queso de Oaxaca, etc. Saying that this is a thousand years cuisine is like saying burgers have thousands of years because they use bread.

The food of Mexico is so fresh and diverse, for the most part, unrefined and not GMO'd, like the over processed crap we call food in the US, took me a while to get used to the chili and spice but actually makes u healthier.

Esa parte de México pertenece a Centro América, su cultura es increíble y algo diferente a los estados del norte de México, el sur de Mexico tiene mucha coneccion con los países de centro América, el mundo maya etc. Cuando Guatemala pertenecía a México. Estos platillos son ancestrales, no son mexicanos del todo. Una delicia ancestral desde los tiempos de los mayas comían esto.

Once again my Keyboard is full of drool and my stomach is trying to chew its way out towards the screen. You have the best job in the world and we love your videos. Favourite ones are usually the Indian ones but these Mexican foods are just so beautiful and colourful. Mmmmmmm. An hour after lunch and I'm just so hungry again :)

I'm here now and these vendors and people so far are so unfriendly. Very serious and standoffish and so far Oaxaca looks like a dump to me. I'll explore more in the next five days to see if I change my mind based on what I see. My hosts of my airbnb here are one of the friendliest and helpful hosts I ever had though.

No not salsa verde. But Salsa de Aguacate or in english "avacado salsa". It's really good and based on the area he's in, it probably has tomatillos in it too.
