Welcome back to my channel. Today I’ll be showing you how I make these fall off the bone oxtails.
INGREDIENTS: (Season Oxtail)
2-3 lb Oxtail
Salt to taste
1-2 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1 tbsp green seasoning
1 tsp ground all spice
1 tbsp ginger sliced
Fresh thyme
1 tsp browning (can use soy sauce)
OTHER INGREDIENTS:
Sliced onion
Green onion
Pimento pepper(seasoning pepper)
1 scotch bonnet pepper
2 garlic cloves
Bay leaves
1 chicken bouillon cube
4-6 cups of hot water
2-3 tbsp brown sugar
2 tbsp vegetable oil
-----------------------------
Total cook time was 2 1/2 hrs

I would just like to make a suggestion...I know that we caribbean people often like to cook and eyeball the ingredients, but maybe for people who are really clueless about cooking, it would be nice to have measurements that they could use to replicate the dishes. Nevertheless I love your videos!!! Keep it up 🇩🇲🇩🇲

Finally someone adding brown sugar before anything. In most stew bases i always brown off sugar it gives such huge depth of flavour.

Never saw Scotch bonnet whole in a recipe, nice idea ! I don't like much heat just the flavor. Unlike my Nigerian girl who loves to cut five and six into her recipes and I said, no way don't put more than two for me !! 🤪🙄 Perfect ! Love the Ford hook lima beans and carrots near the end. I marinade mine overnight with the Brown Sugar that I add to my dry rub mix. DELICIOUS !!

I dont have all the ingredients so I took your recipe as a guideline. Next time I have oxtail I will make sure I have everything & I'm sure it will be 100 times better that way! Thanks for this informative & to the point video😄

It’s a mixture of fresh seasoning blended together used by most Caribbeans.

@@QueenRawStarr most shops that offer seasonings will stock green seasoning. I live in the UK and we can get it lots of places or make your own if you have time.

@@HandMeDeals it depends on how much oxtail you're cooking..if you are cooking about 3 pounds yuo can pressure it for about 45 minutes, if it's not soft enough you can put it on again for another 10mins..

What is the green seasoning? I learned a new trick using brown sugar to brown like a Roux but we use flour.

Brown sugar is for a browning(most Jamacians use) but it's not the same for making a roux like for a gravy.

I love your video! I just have a question about the caramelizing process. What temperature do you burn the sugar on and for how long? Also, how much water do you continue to put in the pot during the 2hrs of cooking?

Put the stove to 7 and just keep stirring until it’s a dark caramel brown color then go in with your oxtail to sear then off! Good luck on your recipe, have a great day.

It can be made or bought in a store. Onion, garlic, scallion, thyme, peppers, parsley and any other favorite fresh seasoning you may like with a little water, oil or some use vinegar
