You can make the bread days before you make the sandwich. The egg custard doesn't take that long. Or you can do other parts while stuff's cooking. Still it's about an hour or so.

Are you talking about the half and half? That is both as its equal parts milk and cream. Half and half is called cream in the us because it is by definition cream.But your not wrong ether as it dose have milk. If that is not what you are talking about please clarify.

I would add 2 -3 teaspoons of mayo to the eggs. Mix in some other spices like; Chipotle peppers ... and top with Pepper-jack cheese

You know, I've never tried that but that makes sense. Like I can understand the concept of adding cream (fat) to sort of interfere with the process that causes the eggs to go stale and rubbery, but why not make that fat an egg-flavored fat like mayo?

That's the thing about it too....any egg that isn't fresh is always gross. I know she claims that the cream saves this one, but I don't buy it because I don't believe that any type of egg ever reheats well so the sandwich is going to be cold, rubbery or both.
