The dish of chicken rice, is really just that - chicken that’s cooked in a certain way, served with rice that’s often cooked in chicken broth and some light seasoning, paired together, and served with both a sauce and soup on the side. It’s not typically an overly flavorful dish, but it’s one of the ultimate comfort food combinations.
In this video I met up with Daniel who is a Singaporean who loves chicken rice. We started off at Yuhua Village Market & Food Centre to go to a place called Hup Hong to specifically eat their version of roasted chicken rice. The roasted chicken, I’m not sure if it was deep fried? was sliced up on top of a plate of rice and served with a red chili garlic sauce. Overall, it was quite a tasty plate, the chicken was smooth but not mushy, and it was salted perfectly. I also liked the sauce at Hup Hong, which was heavy on the chilies and garlic, with a faint taste of ginger, and nicely salted.
After Hup Hong we took a drive across Singapore to a legendary boiled chicken rice restaurant, and a place that serves an original pretty old fashioned Hainanese boiled chicken style. The restaurant itself was pretty cool, very authentic and looked like it had remained pretty much the same since it was open the last 60 years. We had a plate of boiled chicken and each had our own bowl of rice. What I really liked about Yet Con was that the chicken really tasted like chicken, it was a natural tasting boiled chicken with a very firm texture. I also enjoyed how they had two different sauces, one just pureed ginger, and the other a chili vinegar sauce.
I thought the roasted chicken was really going to win for me, but after testing both, I was pretty pleased and impressed how good the boiled chicken also was. Overall, I think I’d prefer roasted chicken on a whole, as I’m not a big fan of boiled chicken skin. But that being said, I highly enjoyed the Yet Con atmosphere and shop. Both were good. Which version of Singapore chicken rice would you prefer? Roasted or boiled?

I agree with you, I'm also not a big fan of chicken skin when it's boiled but fried or roasted is absolutely delicious. They sell a similar chicken in Colombia but you always get salted boiled potatoes and our famous arepa as side dishes.

My personal rule of thumb: when eating at a fancy or famous chicken rice place, go for the boiled chicken. When eating at an ordinary one, go for the roast. The quality of roast chicken doesn't vary a lot between different outlets, but good boiled chicken and ordinary boiled chicken are worlds apart in terms of flavour, aroma and texture.

you should try the chicken rice at bukit timah market next time, it's my favourite and they are usually sold out in the evening..i love roasted chicken and gizzard!

Here's a challenge to all Chicken Rice lovers - try one where the chef expertly de-bone the chicken parts before chopping it into bite sizes. Its not commonly done nowadays either due to time constraints or simply lack of skill, but chicken thigh bones are notoriously brittle and tend to shatter causing little shards of bone in the meat. The de-boned version, in my humble opinion is an experience in itself.

damn in my opinion, overloading all that spice and ginger onto the chicken really kills the real purpose and taste of Hainanese Chicken. Hainanese Chicken Rice is really about the pure fragrant chicken taste. Dipping it was really all it needed.

Yeah, he ruins the food. Atleast first try it without all those spices, then follow-up with them if he prefers. His reviews are pretty bad. I come to look at the food.

+s1221ljc "In eastern cooking, spices add to the flavour of food not ruin it." You're wrong because you are generalizing. Especially in Chinese dishes and Japanese dishes, only certain foods go well with spices. Many don't actually need spice at all. And Hainanese Chicken Rice is one of them.

+s1221ljc I never said anything wrong with ginger, as ginger really compliments well with chicken, however just don't overload it. But chilli is definitely not a good condiment with Hainanese Chicken Rice, since it overpowers the fragrance. My opinion anyway.

Actually, you dont really eat boiled chicken for the strong taste. you eat it for the juiciness and the classic fragrance of chinese herbs.

Great video. I enjoy watching your expeditions to find great restaurants around the world. I have a suggestion. Maybe you could develop an app where you track and log all the restaurants you have been so that travellers can find the pinpointed spot via gps and. This would be specially great if you want to see how nearby you are. Especially now that we live in a day and age of portability and adaptability. Just a suggestion but I would definitely download it if you did do one!

Ate at Yet Con sometime last year, overall the meal was good and the ambiance is fantastic. Makes you feel like you entered a time capsule. But a simple chicken rice meal for two cost me somewhere around 18SGD which to me, as a local is incredibly overpriced for chicken rice. Furthermore it wasnt the best plate of chicken rice i have eaten. Great experience overall but it gonna be hard for me to visit them again

OMG you went to Yuhua village for chicken rice Mark? There's another food centre nearer to Chinese Garden MRT who serves a much more tasty boiled oily chicken rice!! And it's very popular with long queues, selling out of stock in the afternoon.. Yuhua Village is much more famous for it's Wanton Mee called 'Fei Fei wanton mee' and the Hokkien mee stall nearby is super tasty with a lot of gravy! So sad Daniel brought you to the wrong place:(

I wish we could get this simple honest wonderful food here . We get crappy sugary pappy overpriced 1970s Asian food still in the UK . The few who try to sell Asian food charge way too much for sub standard food . Manchester's Trafford centre food hall is the worst take away on earth . People from overseas expect better than Trafford Centre food hall rubbish . Australia does it better even . You get a decent Laksa soup in any Aussie shopping mall . Manchester's got Tampopo and Waggamamma . Questionable quality at high prices . £10 bowl of soup . We've travelled and know the difference .

I'm guessing it's galangal combined with young ginger,sesame oil,salt,sugar and some spices...which explains why the ginger didn't burn. The ratio of galangal to ginger may be 2:1 or even 3:1...

This simple cheap nutritious dish can't be reproduced in the UK . Because the chicken has no flavour here . So the broth has no flavour . And because the UK market charges too much . 50p breakfast in Malaysia . £10 UK I bet . No wonder we live off freezer fodder . Working class people don't have access to good food here .

Roasted and Hainanese Chicken are different but both equally delicious. The chicken meat doesn't even need any chili or dip at all. Just pair with a bowl of steaming white rice and that's already a winner.

Daniel you are the tru gem to the world of Chicken rice. I just love chicken rice. But Daniel we must not forget the best Chicken Rice comes from Ipoh with the Towgay. I have to make a detour to Ipoh just to have my fix of Cowan Street Chicken Rice. Now the owner tells me he closes from Monday to Wednesday

I lived in Singapore for a year. IMO chicken rice is basic and bland. Steamed/boiledchicken and plain white rice with chili to add flavor. If you go there do yourself a favor and get the chili crab and a beer (my favorite) or beef and onion with ikan bilis with kimchi on a sizzling skillet. The fried dori with fries and chili sauce (basically a spicy katchup) is also a great lunch.
