In Korea's past, during the Joseon Dynasty, there was not a single spicy dish containing chili peppers. As a Korean, even now, I can definitely say that there are much more types of Korean food that do not contain chili peppers (such as gochujang, gochugaru, etc.) than korean food has chili. Korean food originally focused on the original taste of ingredients. Look at the Joseon Dynasty royal cuisine drama Dae Jang Geum. There is not a single dish with chili peppers in it. # Recommended Korean food without a single chili pepper: clam kalguksu, seafood kalguksu, chicken kalguksu, beef bone kalguksu, tteokguk, kongguksu, tteok(songpyeon) miyeokguk(seaweed soup), seolleongtang, gomgtang, galbitang, samgyetang, yukhoe(raw beef), beef bulgogi, galbi, galbijjim, japchae, eobok jengban, white kimchi, soy sauce bibimbap, soy sauce tteokbokki (gung jung tteokbokki), shinseonro, gujeolpan, tteokgalbi, soy sauce pork bulgogi, vegetable porridge, white porridge, abalone porridge, grilled fish, pollack soup, egg soup, soy sauce marinated raw crab, bori gulbi, buchimgae, seafood pajeon, peongyang nengmyeon, regular kimbap.

It was after the 1960s that chili peppers began to be used in Korean food in earnest. Originally, kimchi did not contain chili peppers.
