I love how you did the cost breakdown, with what the actual groceries would cost! So many of these videos are like "I bought all of these expensive ingredients but I used only a teaspoon each so it's 0.67 per serving!" when actually buying the ingredients in full size packages is still not affordable to a lot of people.

Its really handy knowing how much each meal costs to buy, then what it actually costs to make. It would be helpful to see how the remaining ingredients are utilized because I always struggle with what to do with the left over bits and pieces, and my kitchen ends up looking like a bad episode of Chopped... 😬

When I end up with leftover bits and pieces I usually make a stir fry or a salad 😊

Just be creative and cook according to what you have in the fridge, not with a certain dish in mind to start with. That's what I do :) pesto: great for a sandwich, stir-fry, pasta or on pizza instead of tomato sauce as a base. Arugula: sandwich, salad. Olives: make it into an olive tapenade or - again - sandwich or pasta dish.

I want to try the middle recipe first-the one with roasted veggies and chickpeas and polenta. That just looks like my kind of meal. I love the idea of warming the chickpeas in the pan after cooking the polenta. Thanks for all the ideas. Someone else suggested an Asian theme next, and I seconded that. But then I saw someone else suggested Mexican. I’d love both of these. :)

I have done the gnocchi twice now and have leftovers to make a couple more times. Such a good idea. I did leave out the olives on the second round. It could have just been the ones I got but they did weird things to the flavor profile. Then doubled the greens to wilt down (also sprinkled parmesan flakes) holy crap. Solid meal will totally make again in the future, thankyou!

The Romesco Sauce is soooo good. I don't know if it's a newer item but it's wonderful, so versatile. Just ate it in a veggie stuffed pita with hummus mmmm. I really like that you used polenta, I'm usually intimidated by it, but you made it look easy so I'll give it a try. Also, I haven't had success with the cauliflower gnocchi, they usually just get too mushy for me, but maybe I'll try again, and give that Basil, Kale, Pesto another shot too because I don't remember liking it the last time I bought it. Great video!
