About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. For cooking all types of dishes in brass do tinning (coating of tin) on it in India we all use tin voted brass utensils for making spicy curries and it's safe and beneficial for health. This method is used in India from thousands of years and also stated beneficial in Ayurveda.

to clean brass wok use a half cut lime wedge! its acidic and scrubby. I use these to clean my brass music cymbals as well.

I like the new shape of Woks with the flat bottoms that work well on electric and gas stoves!!! I have an older Wok with the round bottom that I can't use anymore with my electric range. Aloha

Newbie here, just found your channel and l am loving it! all your videos went into my "watch later" as it's late at night here and l couldn't watch them all now, even if l really wanted to :) Thanks for showing me the correct way to care for the wok, as l was always wondering why mine didn't last long, now l know l cared for them poorly.. Thanks for all the videos, it will be really fun learning how to make Thai dishes :)

I just found your channel and I am loving it :D After travelling long and wyde in south east asia I am starting a thai delivery in santiago of chile, my only question is about your videos do you do them all by yourself and what kind of lighting do you use? Finally if you grow up in thailand your english is amazingly good!

@@willnichart Don't believe the "exact same one" claim. Chinese knock-offs are well known for copying the look, but not the functionality, of the better brands. My mother had one that frequently leaked propane around the cassette. I was worried for her safety, so I bought her an Iwatani brand model from Japan. It works perfectly.

Thanks for a video! :) Anyways what about using wok pans on an European stovetop? I have a gas stovetop however when I use my wok the fire is in contact just with the bottom of the pan - not with the sides. Is it sufficient? Wouldn't using a normal flat pan be a better choice?

Great Vid, Pai.......I have both mortar and pestle same as you but I use a Le Creuset wok. Do you have any experience with induction cooking?

(sorry, my daughters u tube name) the house we've shifted to has a late model induction. We have a small two element hotplate sitting on top we use because the induction elements operate by EMF's, very bad health wise.

I just bought a 14" Carbon Steel Wok, With a Round Bottom, For my Gas Stove Home.? I am going to Season it outside,? Because of the Smoke it makes while Seasoning it etc.?

Glad I found this video ... wondered what portable gas burner you used. The brass pot might be non stick because old brass has so much lead in it. :)

I read that Kosher Salt is good for cleaning out the Wok & it will not hurt the Seasoning etc.?

That Wooden Pestol,/ You can sand it down to a Smooth finish,? & then use some Mineral oil on it it is food safe the oil.? It will keep the wood nice on the Pestol

I don't mean to be a killjoy, but $80 for a portable gas stove is quite pricy. That likely comes about from it being: Iwatani (a premium brand), made in Japan (higher labor cost) and imported (higher export cost). Here in Japan, portable gas stoves range from $15 to around $40. That said, it is a good model, featuring a well-designed burner with a high output of 3.5 kw/h.

Pailin, Recently purchased the 8” mortar and pestle demoed on your program. How/what do I need to do to the interior surface of the mortar and the surface of the pestle? I’ve added a small amount of water tot he bowl and rubbed the pestle around. That resulted in a grey gritty slury

Is there a way you can clean the smell from the bottom of the wood pestle. Lol its not a trouble some smell but it sure does smell like chili, garlic and fish sauce.

I use a 14 and a 16 inch wok on a portable butane gas burner like Pailin's and both work well, however there are several burner heat ranges available. In the $80 US range, most of them are 10,000 to 15,0000 BTUs however for $25 you can buy the smaller 5,000 to 7,000 BTU burners that look almost exactly the same. I have owned both and personally don't like the lower heat burners for wok cooking as they tend to stew and steam the food you are trying to stir fry. Mine is 15,000 BTU and I have chowed on a charcoal starter chimney too (you better be ready for that heat, which is over 85,000 BTUs!). I strongly recommend a cast iron wok ring to stabilize the wok. is it ok to store the gas cannisters in the garage? I'm in the Toronto area and sometimes it gets a little cold/hot? just not super keen on storing them inside if I don't have to.

Yeah I store them on the balcony myself - and in the new studio we store then outside. They get a little rusty on the bottom but it's not too bad :) I wouldn't store them inside though for sure. Cheers! Adam

I think you dnt need to wash granite one with soap . Just the hot water will do the job as soap will absorb to granite and will contain with food later.

I do not have a gas burner or gas stove to heat /cook with my WOK. I only have a flat top electric stove top. Can I still make this fried rice recipe in my wok using the heat from my electric burner to heat my wok? Or is it recommended to buy a separate butane gas burner?

Hi! She tells me "Electric elements are probably the least optimal as compared to gas or induction, but it's still doable - you just can't get the wok as hot and it takes longer to heat up and cool down. But I used to cook on an electric stove with a wok when i was in San Francisco, so it can work :)" ... otherwise we use this kit.co/hotthaikitchen/kitchen-tools-i-use/iwatani-corporation Cheers! Adam

hi Pai ! thanks for this video it really helps to understand the difference between woks! speaking of i was wondering if you would be interested in doing a video on how to use a wok !?? i noticed a lot of Thai dishes are made with a wok and i realized i am a serious newbie at using one.. so i ended up watching some chefs on youtube to get the feel of how they work with it , i mean i'm not expecting to be a wok master right away , haha .. but my thought was....what does one need to know about woks to make really good tasting stir fry's ? and that sort of thing.. maybe the basics of using one would really help people to know thai food better too ?!! thanks again xoxo Leah

Hi! If you mean the steel one I think she actually got it online however it's not available any longer - re the brass one she got it in Thailand :) So we went looking for a substitute for the steel one and found this online ... kit.co/hotthaikitchen/kitchen-tools-i-use/2696621-mv-trading-14-inches (and added it to the Kit) ... but it's not the same of course. Sorry we can't be more helpful on your search! Though if you stick to the guidelines in the video you should be ok :) Cheers! Adam

If you refrigerate it quickly and didn't leave it sitting out for a long time, usually lasts at least a week.

PailinsKitchen Many people do not realize that if not refrigerated, cooked rice can lead to food poisoning. Another great tool is a rice cooker. Even cheap one's are ok as long as when cooked, the bowl is removed from the cooker as they get very hot. Then fold the rice with a plastic spoon. Works every time.

PailinsKitchen I have no problem using the Iwatani indoors (I just got mine via UPS today), but it bothers me a little that there is a big warning in the instructions that if used indoors it can cause carbon monoxide poisoning.

we use all this in India also please don't was the stone motor and pestol with soap because it absorbs it, just wash with hot water

You probably got the 5,000 to 7,000 BTU burner, which looks the same from the outside. In the $80 USD range, the burner is usually 12,000 to 15,000 BTUs and better suited for wok use.
