Greetings! Have you ever wondered if you could make your own spreadable cheese at home? I have been learning about cheese for about two years now. Having successfully made Mozzarella I wanted to make my own spreadable cheese. A couple weeks ago, my friend Bev, over at TheMrsVolfie channel made some quick spreadable goats cheese. I decided I would make sure to get an extra bottle of milk the next time we did our milk run so I could make some for myself.
Here I am demonstrating how I made a spreadable farmer's cheese or what the French call a Frommage Blanc or white cheese. I also took it a step further and made a cream cheese by beating some heavy cream into the finished product. You can also derive cottage style cheese from a similar process, but I will do that in another video.
Just knowing how to do this can help you to be more aware that you can make things for yourself. It will also give you a great appreciation for the art of cheese making. Knowing how much milk it actually takes to make a pound of cheese will help you understand why cheese is so expensive! My 10 cups of milk rendered 2 cups of cheese.
This is a relatively simple process that you should learn because homemade cheese is amazing! We made this and used it on bagels for breakfast. Delicious!
You have the freedom to season the cheese any way you like. I have made a plain cream cheese and a seasoned spread. If you wanted to take this a step further, you could unmold the farmer's cheese onto a plate, drizzle with a fine olive oil and top with roasted red peppers and cracked black pepper or mix with roasted garlic for a real treat!

Last Saturday I went shopping and bought two liters of whole milk, a liter of butter milk and a liter of heavy cream. Then on Sunday morning I made this recipe. I used the full two liters of milk and two cups of buttermilk and 2 tablespoons of lemon juice. It turned out really well. After letting it hang for several hours I added the heavy cream and beat it with my mixer and since the girlfriend likes basil I added fresh basil. I think it will all be gone by the end of tonight.A friend of mine is an instructor at a culinary school and she suggested adding the herbs to the milk as you heat it. This will give a fuller flavor.Thanks Noreen.

Gosh, I just love your videos! I feel like I'm hanging out at a friend's house learning to cook in your kitchen. No pretense, No fancy machines, Just making all the fancy and not so fancy down home cooking using what we all have in our own kitchens and what we can get at our own neighborhood store. Thank you for the video. When I was young my Mom used to make farmer's cheese and Half of it she would hang on the clothes line to dry out and get hard for a week or two. It was soooooo good after being out in the sun and hardening. She would also put caraway seeds in it. Thanks again.

No this is from a place called Maple View Farms in North Carolina. I have a local mom and pop store that makes the 2 hour drive once a week to bring this local milk to us. It is hands down the best milk we have ever had. Thick cream, whole milk that borders on half and half and butter milk to die for as well as butter, but I usually make my own for spreading.

I tried your farmers cheese and it was absolutely wonderful. I added some salt, garlic powder and dried chives. Beat it with a little cream and voila! Thank you for the videos.

Thanks for posting this. I've made goat cheese for years, and love it. It's so cheap to make cheese if you have a goat that eats your grass and gives you milk from it. Just a bit of cheese salt and vinegar and cooking and pressing makes a bounty of eating Of course one can make the hard cheeses to slice, once the basics are learned.

I have watched at least a dozen of these how to make cheese but I must say this one was my favorite. And the suggestions on what to do with the weigh is awesome! Thank you for making this video. These days no one knows how to do things our grand parents did on a daily and weekly basis just as a normal routine. We have lost all that knowledge. I thank God I was taught some of this but cheese making wasn't one of them. If anything happens to our ability to just run to the store and buy stuff ready made very few will know how to survive. I appreciate you sharing your knowledge with the world.

Thanks Chista. Add some mashed potato and chopped chives and you have the best ever pirogui filling. Chives much better than chopped green onions. Best in the world. People used to Flock from all over to pig out on my Grandmother's pirogis that she made just like this. She used her own recipe for the noodle dough to wrap the filling. After we boiled them we fried them till the edges were crisp. They were so good you behaved your self for a week after.

In fact when I first found your channel I did watch for the whole weekend. I can't print these recipes. And I want to make both of these cheeses. I may be glad that I have seen your video because other videos never mentioned to have the milk room tempered and I simply placed the milks cold into a pan and to make a long story short none of the milk curdled. So I am letting it sit until it does. In the meantime, I will be trying your method this coming weekend.

You can make cream cheese with homemade sourcream. Just bring a pint of cream to room temp, add 2 Tbsp yogurt to it and let it set in a warm spot overnight. Season as desired and place in a bag or flour sack and hang in the frig overnight. Roll the ball in black pepper and use as boursin.

I made it last night. was delish. I do not like milk mom said I took my self off of milk when I was 9 months old. My husband loves milk and he liked the cheese a lot.. Here is what I did with it. We started putting seasonings in it and made a dip ....is great. I started out with 1/2 gal of milk and I made my own buttermilk. (I was out) The time frame it takes to make it is almost none. very little time hands on, just wait time. I will do this again. Thanks Noreen!!!!

I live in Turkey we there isn’t buttermilk, but kefir works perfectly as a substitute for any recipe that calls for buttermilk. I just started making it myself (kefir) so I will try it in your recipe. I also always use raw milk when making kefir and yogurt, so it should work here as well.

Yum! Between your video and Bev's, I just have to do this! My grandparents (and my Dad, when he was young) were dairy farmers and it's ridiculous that I've never even tried making my own cheese. I'm with you on the cheese cloth, too. It can't seriously cost very much to make, but they sure charge an arm and a leg for it. So, flour sack towels it is! Thanks so much for the excellent instruction and the inspiration, Noreen! (you and Rick sure have a whey with words! lol)

make a cheese bag with flour sack cloth. Really handy for draining cheese and as a jelly bag. Brew shops sell them for straining beer.

I just made this by mistake by making home made yogurt in a slow cooker. As the yogurt was almost done I had put the cooker on low heat to get the temp back up to 40ish C. I forgot that I had turned it on and 2 hours later it was REALLY hot and all the whey had separated. Filtered it and added some salt and garlic....WOW!

Thanks Noreen. Loved your video. I am shocked to know that people throw away the milk that curdles on its own or gone bad the way you put it. Ever since my childhood days my mother has been making Paneer from milk which curdled on its own or by adding whey buttermilk or lemon juice or vinegar. And her mother before her and so on. Now I do it :D. In India, we make paneer by curdling milk and do not need to use rennet or anything chemical etc. Just simple butter milk, lemon or whey or vinegar is used and almost daily we make it as we do not have culture to store anything or freeze anything. Mainly due to hot weather and fresh milk and vegetables are easily available and therefore we don't need to freeze them . I was looking a video for making mozzerella or Parmesan or Cheddar cheese without using rennet. I came across your video and absolutely loved it. All sweet dish here are made from chhena or cheese before it is pressed and made paneer. The way you r u bbed the chhena or cheese till oil comes out and becomes soft and creamy. Varanasi is a well known place which is famous for it s pure cow milk and sweet dishes made of this awesome delirious milk. I make mascarpony cheese which is like cream cheese quite often. I quite often make Tiramisu love it so much. Thanks once again for such an informational video. Try rasgulla recipe an Indian Bengali sweet dish you would love it is not at all difficult to make. Keep us informed about your many cooking experiences. And I will keep looking for making mozzarella cheese and Parmesan cheese and cheddar cheese without rennet.

I started out using bags that I used for wine making, but my husband bought me several pkgs of flour sack towels. I love the texture, but my OCD couldn't deal with all the excess cloth hanging around, so I placed all my stainless steel bowls on the towels, measured & marked out from the edge, used my serger to sew & cut it the excess. I then used round elastic, and my attachment so the elastic is enclosed. This allows me to place my towel in the bowl, pour everything in the bowl, then gather the elastic edge into a rubber band, and hang it from my cabinet knob twine noose that I keep on one knob. I know, excessive OVERKILL, but I love having 30 ready to go drain bags. :))

No worries! I like the buttermilk because it already contains active cultures. The same could be done with a bit of yogurt, but I don't think you would need as much. The buttermilk also adds a nice tang and smoothness to the finished product. I am going to tackle an easy pseudo cottage cheese next that requires no rennet. We shall see how that pans out.

I made this, this weekend- found a near-date 4pt whole organic milk. I used a fairly new T-shirt which was too thick for the job but the cheese cloth i have it too thin. I split the in half and seeded part with a couple of bits of crumbled blue cheese. It's currently still growing.

Excellent advice regarding "milk or cream that has gone south". So long as you have a good reefer, when the container is sitting on the counter for short times only, the caps are immediately replaced after pouring, and there is nobody drinking directly from the container, what you have is a fermentation from lacto-bacillus. Use it as you did, use in in your next pancakes, cornbread, biscuits, etc. For heaven's sake, don't throw it down the drain.

That's easy! Just slice some ripe strawberries and add it too the cream cheese, then beat lightly with the mixer. You will love the result! You can do this with any berries.

Glad you liked it. However This "cream cheese" is really only a spreading cheese and not an appropriate swap for commercial cream cheese in recipes. I am wondering why commercial cream cheese is not a good choice for vegetarians?

I agree! Drinking from the bottle is a big no, no in my house. We never do it. My girls and I don't drink milk. I personally can't stand the taste of it. Only enjoy it as cheese or sour cream etc.

Hi! Thanks for the kind comments! Unfortunately this cheese is not going to work in the cheesecake or any cheesecake recipe. Commercial cream cheese is needed due to the fact that it has other things in it that make the cheesecake work. This cheese is great for enjoying on crackers, or toast or sandwiches etc. Hope that helps!
