Young man. You. Are. A. GODSEND! Long story short: I am Cuban-American and my good Trini friend put me on to dhalpuri roti, and I bought the split peas at a well-stocked Shoprite, where I ALSO found split pea flour. I also wondered what your viewer did about this very possibility you crafted and conveyed and illustrated SO beautifully! I am floored at how well this, my first try at ANY roti, let alone a stuffed one, came out! Also, this is the first time I have followed a recipe video in my life, and seeing that you hacked the split pea flour shortcut made me decide, at 11pm, mind you, to give it a go, this after watching your oil roti video and first thinking I should try that. Anyway, the dough is soft perfection, and every single roti puffed up at least a little, and some a lot - ON MY FIRST TRY! I salute you, and I thank you profusely for perking up a slightly gloomy evening!!! I dont know if you'll get this in time to answer my question but I'll ask anyway: how should I store these babies? Should I freeze them? My mom will devour at least two tomorrow, but I want to keep them as nice and close to fresh as possible. Thanks again SOOOO much! Having done this simplified recipe, I now feel ready to try the full on dhalpuri roti recipe!! Lord bless you, stay safe, and keep on making culinary magic! Lastly, thanks for being so open and generous with your cuisine, instead of hiding and hoarding your tricks of the trade. All the best! ileana

Wow! I am going to adopt this method for making 'Puran poli', a sweet delicacy made in India especially during festivals. Along with gram flour, jaggery, a pinch of green cardamom & nutmeg powder. Alternatively, for those who do not have a sweet tooth, after the filling has cooled, add salt & powdered dry cummin & coriander seeds, a little red chilly powder & a teaspoon of lemon juice. Further process - the same. This will make the process much simpler & definitely less time consuming! Thanks a lot. :) God bless!
