Dear Miss Mary, After watching you make the EZ no knead bread and several other bread videos also, I began thinking about yeast and flour and recipes when I walked the aisles at the grocery stores. Well, on the 27th Nov. I bought yeast and unbleached flour, and remembered I had the rest already. Home I went, put away the groceries, and began to mix the dough. I spontaneously put 1/2 a teaspoon of cinnamon and 1/4 teaspoon of fine ground black pepper into the dry mix with about 1 teaspoon of baking soda (woops!). I wisked the dry ingredients well for 10 minutes, added the water, and formed a dough ball. I covered it and kept it all night in a warm room. On the 28th Nov. I preheated my countertop tamale oven/warmer and refolded the dough, covered it, and let it rise 30 minutes. Then I put it into the 450°F. for about 30 minutes. Here it is the 30th at 145pm and I just finished my very 1st loaf of no knead artisan bread w/ cinn. & blk pepp. with pats of salted butter. It was POSITIVELY DELICIOUS & FILLING! Thank you! I would never have done it without you! You put me on a new path! And I still have enough makings for 1 or 2 more loaves!

Mary has a way of explaining things that make following the recipe easy to grasp. Every step is explained so well and I love the warm delivery. I just made this in my Dutch oven and it turned out amazing. I purchased a bread making cook book where this basic recipe requires 3 lots of proving over a longer period and liked the idea of simplifying with less handling and just one 1 hour prove and a 15 minute 'rest', plus I wanted to try this in a Dutch oven. I tried the recipe from my cook book with the longer steps and it was pretty OK, but your combination of methods has turned out absolutely fantastic. I am 58 and this is my 1st couple of time at bread making and I have to say that I feel so happy to have got such great results with your help. Bless you Mary and stay safe xx

For proofing I put a cup of water in my microwave and heat it for 2 min, then put my bowl in and leave it to rise . This creates a moist warm environment.

Mary is one of the chefs on YT that I cant watch over and over. The videos are complete and she doesn't forget to give all the info for the various ways to bake, i.e. using a dutch oven or a fry pan. I love her channel, and love how she goes into great detail. She doesn’t use flashy ridiculous special effects like some of the other popular channels; she simply offers a warm, friendly environment for both new and experienced cooks alike. Such a treat! BTW, this makes really great bread!

I love that you explain the difference in yeast. Most people just say add yeast. That's so important with bread making. I've made more hockey pucks than I can count.

Wow, I cant believe it! I just made this bread and it was amazing! I did 2 cups white all purpose flour and 1 cup wheat flour. I served it with roasted garlic and spaghetti from scratch (noodles were store bought though). My husband couldn't believe how beautiful the bread was. Oh and this was my first time making bread. Thank you Mary! Im going to make your butter next!

I had the opportunity to try out this recipe today and it is absolutely fantastic! It turned out so delicious no one is going to believe how easy it was, and I'm pretty much a newbie to bread baking. I do not own a Dutch oven, but I do happen to own a French oven (a cheapie from Aldi ) which I used in place of the Dutch oven and it worked equally well. It came out with a beautiful golden crisp crust and a perfect soft and chewy center. It's going to take all the will power I have to save the rest of the loaf for dinner with the family! I wanted to try to replicate a rosemary sea salt bread I used to buy at a store that has since gone out of business. I had some dried rosemary that I added to the dough before baking then rubbed some olive oil on top of the warm baked bread and sprinkled a little more rosemary and a small amount of sea salt on top. I gotta say I think it turned out better than the store bought favorite, I'll definitely be making this again!! P.S. I really enjoy your videos, you are so pleasant to watch and I love that you are sharing methods and recipes that most anyone can do with what they have on hand. You're just what the world needs right now :)

Well, I decided to make your bread today. I whipped up a batch, put it to rise and went out to shovel snow. The snow took longer than I thought, and the bread ended up raising for one hour and 45 minutes!😮 talk about doubling in size! But I thought what if I got to lose and finished out the recipe. I just took it out of the oven for the second time I had forgotten to take out the parchment paper, and it still came out! Talk about forgiving you are right Mary! I wish I could send you a picture!!!! thank you for the great tutorial❤

I am a new baker. I have tried numerous recipes, with all sorts of different flours. I would say the results were ok but not like this recipe. This is the best one! The bread comes out beautiful - rustic and crusty. The taste is amazing! I can barely wait for it to cool. Thank you for the step by step instructions. That is what really helped me. This is my second time making this recipe. A winner again!!!!🍞🥰

You have this soft rustic voice that just makes me want to listen to you. I watched your video with your husband, and the one with your son and all three of you have that pleasant story telling voice. I saw a tip on another you tube channel and it works beautifully with the parchment paper. Wet the parchment with warm water and literally squeeze the water out. This makes the parchment very easy to mold to the pan.

I raise my bread in my bathroom. Its warm in there all the time!. Also, i have added chopped jalapeños and Cheese..( the 2nd rising) and I have topped the dough just before it goes in the oven with toasted sesame seeds or a mixture of sesame seeds, cracked black pepper, sea salt, garlic powder and onion powder..yummmm

I made this today, used a Romertopf-style clay pot and it came out wonderfully. Thank you so much for the comprehensive instructions and tips delivered in your warm, friendly, calm, and soothing tones. Mary, I like to put my dough in a large measuring pitcher bowl to rise and it's much easier to see if it has doubled. I don't really need to do that as I've been making bread for years, but it's helpful all the same. When I make a traditional bread dough for two loaves, I use a lidded square keeper with measure marks on it.

Mary, you are an absolute angel!! I LOVE watching your videos and have promised you in the past that I would be trying some of your recipes. I never would have imagined that we would find ourselves in the midst of such a devastating and terrifying pandemic and in such desperate need of some comforting food. We are retired health care workers and as such, have not been on the front lines, but we live in NYC and have lost dear friends in healthcare to this horrible virus. Tonight I made this bread (first time ever making bread in my life) and as we mourned the passing of a beloved friend, my husband and I had a cocktail while enjoying the aroma of the bread baking in the oven. When it cooled slightly (of course we couldn’t wait too long) we enjoyed some with a little butter and some with some aged Gouda and it was the most comforting moments we could have ever asked for! This became our dinner and it won’t be the last time that I make it. Can’t wait to try your other bread recipes as well (flour is a little scarce these days)! Thank you my dear Mary! Many blessings to you and your family. Stay healthy and safe💜

I followed your temperature settings as I don't have a Dutch oven. 400 degrees and my bread turned out perfectly. I used two dishes of water to create a steamy environment. All the other recipes called for 450 degree baking temperatures but my crust came out darker than I would like it. Thank you for this tip, huge fan!

Hello Mary, my name is Andrea from Canada. I just want to say thank you for the recipe. I just made the bread and it looks so good. I am waiting till my husband gets home to cut into it. Every time I tried making bread or dinner rolls it has failed me. The only time it worked was when I was in cookery class at the age of 15. I always thought I did not have “kneeding” hands. Lol. Since this recipe does not need kneeding I thought of trying it out. Have a blessed day. Andrea.

After years of struggling to find the perfect PLACE and OBJECT to help make my dough rise...we live in a 135 year old house and it ALWAYS COLD in the winter so bread rising was beyond challenging if it ever turned out! I came across an article online that suggested using a slow cooker filled halfway with water and set on the WARM temperature ...on occasion it seemed a bit hot but I monitored it keeping the temp consistent as well as covering it with a flat metal pan over the opening ....bowl on top ...then covering and tucking a flour cloth around it until it rose properly...totally reignited my love of organic breads reminding me much of my grandmothers cooking😋😋😋 this recipe is very similar to mine other than using half the amount of yeast ,I need to see what the difference would be with a double yeast mix? Now our family asks weekly ARE WE GETTING HOMEMADE BREAD THIS WEEK MOM LOL...thank you again for such a great learning channel for all of us out there who want the best for their loved ones as well as wonderful new recipes...stay blessed

I tried to use instant yeast for hard cider. Didn't work out so I switched to Champagne yeast for cider. Had the jar of instant yeast for quite a while. It expired in 2019 but I tried anyway adding to my 118°F tap water with a tsp sugar. Worked perfectly and bread turned out great. Thanks Mary!

I’ve been doing this recipe for a year now without having seen this video. Watching your video revealed several errors I’ve made. It is a very forgiving bread. But now I will make it even better because of your video.

I have made this several times now and is my go to bread recipe now. It’s so easy to make and keeps so well too. It toasts beautifully as well. For UK measurements, I use 680g flour and the other ingredients the same as recipe, with water approx 600ml. It makes a bloomer size loaf. I don’t have a Dutch oven, so cook at 200c for 30 mins.

I made the no knead sandwich bread, it was so satisfying! Then made homemade breadcrumbs a couple days later. Now I don’t want to go back to store bought I was so surprised at the difference it made to my fried chicken! Thank you for this lovely channel!!

I recently started seeing about no knead Dutch oven bread & thought I would give it a try as bread prices are sky rocketing…I have an old desco Dutch oven, so down the KZbin rabbit hole I went…after watching several video I discovered you & after following your excellent instructions, I ended up with a beautiful & delicious rustic loaf…thank you so much…success on my 1st try, who could ask for more!!! Dear M, I sure do love your videos. I love your pleasant attitude & how you don’t brag about how smart you are.... yes, there are some people on KZbin who really do that! It makes me feel obligated to tell them when they’re wrong! But, I digress. Recently I purchased a Mockmill. The funny part is I had started buying the different grains before I bought the mill. You influenced my decision on the Mockmill. After buying the mill, I anguished about baking with fresh home ground flour. Many people said they kept turning out doorstops. Apparently, the fresh milled flour is much thirstier than store bought flour. So, I kept reading & buying every book that seemed to highlight the grains I have. I’m not too crazy about sourdough because I don’t want to grow the starters & throw away most of it away. I came across a small booklet, by Barbara Swell, all the recipes started with a sponge. Hmmm. That might help solve the thirsty new flour & at least the entire sponge was used in the recipes. Then I came across the "Artisan bread in 5 minutes a day" books. I’m sure you’ve heard of it. Their technique was similar to the sponge except instead of hydrating a third of the flour, you hydrate ALL of it. That seems even better. The dough is good for 2 weeks. It becomes more flavorful each day (so they say). You make a bucket of dough. There is no kneading. It sits on the counter for 2 hrs. Throw it in the fridge. Then when you want bread or cinnamon rolls or buns, you just reach into the bucket pull out the amount you need and throw it in the oven.... it might have to rest before going in the oven. I don’t have the book yet, it’s in the mail. Anyway, after this long diatribe, it would be pretty cool to see you do this method. I haven’t seen anything you can’t do. How about it, M, would you give it a try? Hmmm? "Artisan Bread in 5 Minutes a Day". Sounds too good to be true but it isn’t.

I simply had to make this wonderful bread again Mary because my family love this one. I am still surprised at how this quick as a wink 'No Knead' bread competes, for taste and texture and even edges out, for greater ease and speed my well worked customary recipes. I am just thrilled to bits you shared this. Fresh bread 'A TAVOLA' in under 2 hours? Amazing!

Faery Fox - Isn’t the truth!! I was shocked the first time I made one. There really is no need (forgive the pun!! 😂) to knead bread anymore. I actually think the texture of these no-kneads is better. And I love that we no longer have to worry about all those persnickety finger poke and window pane tests!! Love, Mary❤️😘❤️

Thank you so much for your content! Yesterday I followed your recipe for this bread and your cottage cheese recipe, I was a bit scared to try the 'cultured butter', so I followed a medieval butter making video 😅. I havnt cooked in years and it all turned out great! Even got compliments on my bread!

I found that figs from my tree are loaded with local, natural yeast. Put a couple small ones or a big one in the blender with water per recipe, blend and follow recipes. This adds a nice flavor and a few more vitamins and minerals as well. Rising time will vary, but it works in a pinch!
