One of our favorite meals, especially in the summertime. One thing that I do is to seperate the khoobz, before they go stale, and coat them with a zahtar and olive oil mixture before toasting them in the oven. Makes a great snack with labne and tomatoes...and croutons for Farroush when broken. Thank you for another amazing video.

I'm an old fat guy for whom 'healthy' recipes are an anathema. I use almost the exact same ingredients for my fattoush, but the pita pieces I use have been set under a chicken in a roasting pan. With onions and garlic cloves in there, by the time my chicken is done, I have pitas. onions. and garlic all cooked in chicken fat (read: unhealthy, saturated fat). I know it's a heart attack on a plate, but damn, it tastes so good!

My absolute favorite, I just add something grill so I can get the protein as well and it's perfectly healthy, delicious and colorful diet. Thanks for the recipe... I will give it a try at home but I thought that pomegranate is also one of the ingredient in Fattoush, isn't?

Yes I forgot to add it on video, it is totally optional though. It does add a bit of sweetness, but not entirely necessary. If you have it, try adding a tablespoon first to see if you like it. ;)

Yes, we don't really use vinegar! For salads generally we use olive oil, lemon juice, pomeganate molasses, and season with sumac or even za'atar which all have the zesty properties of vinegar.

Finally, I can stop bugging my Boss' cook to prepare fattoush for me every now and then. You have helped me learn how to make mine. However, over here, they add beetroot but I realized you did not. Also he adds a little bit of black pepper to the salad dressing.

Sumac has a lemony flavor, you can add it to anything that you would like to add a tart flavor and pretty color. I use sumac for chicken, fish, salads, and even sprinkle on hummus :)

This is a nice video recipe. However, my parents always used lettuce in this recipe. The lettuce gives the salad a full-bodied taste along with the other ingredients you mentioned.. We also used lots of real lemon juice and plump calamata (zatoon) olives..

Actually this dish is originally from southern lebanon and should also have chopped romaine lettuce in it along with mâche ( dunno how it's called in english) and the seasoning needs pomegranate molases.

I think the reason the pita chips were originally fried was it was easier and faster. Most homes in the Middle East didn't have their own oven.
