My dad, a coal miner was born in i912 and I was born in 1962. We lived in a holler and dad always had hogs, a smokehouse full of meat, cracklings; bee gums with various looks, often a little rugged; and big gardens. Dad and mom had the talents for homesteading. I was going through my teen years during late 70s and 80s, the times when lives were getting simpler and easier for people in Eastern, KY. In my naivety of course, I started to see all that as hard work and hard ways for my parents who were in their 60s and 70s. On cold, frosty mornings, I still reflect on them being up before daylight, mom building fires inside the fireplace and heating stove, dad building a big fire with a cauldron stacked on big rocks - full of hot boiling water, making sure there was freezer paper, salt for the meat, and plenty of sharpened butcher knives. Dad had walked up hill around 3/4 of a mile to feed the hogs at least once a day the year prior. On the day of killing, mom would fix a huge dinner, which included some fresh meat and maybe some liver and onions, and everyone at the hog killing would come into her kitchen and eat. Dad passed in 96 and mom in 2000, and dad continued his joy until he passed. I am 62 now and have such an appreciation for their character and knowledge of both parents. Thank you for sharing a little of what goes into hog killing. It is busy hard work, but oh what a treasure. You guys are living the good life.

Thrilled that I found you through Becky. My Grampa was a State Patrol officer from the 40's through the late 60's. and Grammie was a gardener. I grew up going to the farm every weekend. they raised all their own protein. And butchered their protein. he always raised 2-3 extra animals to sell to friends. I raised my first cow starting at 9. My first pig at 11. I participated in butchering because it was farm live. I was raised to respect and treat our animals well. Nothing has ever tasted as good as the food from my grandparents farm. I am disabled now, so farm life is not possible for me, but watching your videos is such a blessing,

Buggy is so happy and loves to sing. she loves being outside, barefoot, with her Daddy. She is such a dear little child. I'm sure she has her "moments" like we all do - but she is so, so precious. Just watched Acre Homestead about Becky’s weekend learning to butcher a pig. Very informative!! I also bought your pork cook book so I can expand my sausage making skills. Your headcheese recipe look great. In the UK we call it brawn and I can remember my mother making it. It really is true to say you can use all of the pig except the oink. Even the trotters, love them served with sauerkraut and mashed potatoes. Yum!!!

Just came back to re-watch this one, after realizing that Becky from Acre Homestead was at it; as I watch each of her uploads just like I do yours. Maybe it is the genuineness your each exude and your amazing work ethic that most appeal me to never miss either of you. I can't believe I missed seeing she was at the last workshop; all l can surmise is it didn't occur I'd recognize any of your guests, unless it was Jason and Lorraine, who are sometimes there. Perhaps I was just focused on the process and not on the people. Anyway, glad you met and hope great things come from it for each of you. As always, blessings!

Fun to see other people I watch on KZbin share in your class. Becky from Acrehomestead attended and participated in hog butchering. Enjoyed watching your video and then listen to her review on her experience. She had all complaints on her experience. She stressed what a wonderful cook you are and how delicious the meals were. So positive on the class and how interesting you made it. You may want to catch her videos as she has a wonderful new garden set up. Cooking, processing and preserving. Meg, in NC at a "hog killing" our family and our neighboring families always served baked sweet potatoes, corn bread (flat skillet style & raised cake style), biscuits with sausage & cured ham & homemade jams and preserves, cracklin' corn bread, collard & turnip greens, dried butter beans or blackeye peas, and liver pudding. We also had eggs,grits and sausage gravy or red eye gravy with breakfast. I live down in Southeastern NC. Our BBQ is made with a vinegar based sauce and our liver pudding and hog head cheese or scrapple is made differently than it is made in the Western part of the state. I believe our style of liver pudding has a higher meat to corn meal ratio and no flour compared to that made in the western part of NC.

Becky could learn a lot from Meg on hosting, and cooking. Meg's food looks amazing and she never feels frantic in the kitchen; always relaxed. You can tell Meg enjoys cooking. Hopefully Becky picked up some tips from Meg as well as Ben. And not just about butchering but using various cuts of meat (maybe even ones with bones!) and not just her usual bacon and sausage she gets every year from her whole hog.

Meg's Fudgy Brownies 🍫 1 cup Butter 🧈, melted 2 cups Sugar Whisk together. Then add: 4 Eggs 🥚 4 tsp Vanilla Extract Whisk together. Then add: 2/3 cup Cocoa 1 cup Flour 1/2 tsp Salt 🧂 1/2 tsp Baking Powder Whisk together until it's like a cake batter. Pour into an oiled 9×13 pan. Bake at 350°F for 45 or 50 minutes, but start checking around 35 minutes into bake time.

As an artist myself in the field of music, there's something about an artists hands that I love to watch. And every field has it's artists. I love to watch Meg's hands as she cooks. Just a certain awareness that she probably never thinks about. She just always seems to know what to do next. In music we jam. That's where you take a few ingredients known as chords and then flavor them to our own specific liking with some melodic content that we just draw from somewhere, I still don't know where, but we do. I watch her do that in her kitchen over and over. OK, maybe I need to get a life, but I just love watching her cook! And then there's little Meg making up the biscuits song. What's not to love! ❤❤

Oh my goodness, this looks amazing.❤Meg I will say the wives of your boys will have to be a good cook, But they've got a great teacher you. You and Ben show that you can accomplish anything in whatever space you have. I admire that. Buggy singing her song. Your heart has to be so full Meg overflowing. God is so good❤ The wealth of knowledge people walked away with. Couple years ago my daughter (23) and I got to put her a hog with someone in our town. They had four and we bought one and butchered it. We went through the process of dispatching it, butching eating. But what we learned was so minimal, Just an older couple getting the job done. By watching this, I think wow. I wish we could have done it all over again and done it different. Over the years I'm so thankful for all that you share. I know I was walk away with something new learning from you all. You do it all with such joy and smiles and laughter in it all. We sure can learn from you. I know I do.
