Dharavi - the heart of Mumbai - is one of the world's largest and busiest slums, and its street food runs through its veins. Our vendors show us how to cut it in this competitive slum and make a living from its thriving inner-slum economy. Malai, an idliwalla from Tamil Nadu shares his secrets for perfect fluffy steamed rice cakes called idlis, crunchy lentil fritters called vada, all served with his trademark tomato chutney.

=====================
About Slumfood Millionaire: Embark on a mouth-watering journey through the slums of Asia, the last places on earth you would expect to find delicious foods. This unique documentary series celebrates the flavourful, and often unknown dishes made by talented cooks in the slums of Manila, Bangkok, Mumbai, Jakarta, Phnom Penh and Kota Kinabalu. Using cheap and overlooked ingredients, they cook up scrumptious dishes that are famous within the slums. Their passion and resilence prove that good food need not be expensive.

It is a very standard recipe, so maybe that is also why there is no point in hiding. The thing about cooking in general, and Indian cooking in specific is cooking out of instinct (thus is observed such a lack of organised recipes, ingredient measuring)- it is the knowledge of the principles of cooking, mastery of their skill over the years, and cooking with love/soul that defines the quality of the food. This is also why the exact same recipes may taste different across Indian households/kitchens.

The staff in the hotel was great and I had no issue using a bucket for showering. Calcutta was an experience and India will be worth maaany more trips (so far three). And heck yes: street food for sure!!! Just be aware of old samosas in old oil…that was the only spoiler…♥️ PS: a "slum" is what? The only thing that gives slums negative impression is a lack of public planning and you can't even say that it's the government's fault, because the poorer migrant sections in any big cities will flock to the places that will be least expensive and they will be the least planned. By the time the government get to redeveloping the area, the areas would have been too densely populated and convincing the people to give up their only shelter and have faith in the government would have become a gigantic task.

@@Mrtribru69 Yes, way back in 1975, I was a young teenager and worked as a bus boy at my Uncle's Fish Restaurant. The amount of food that was throw away was heartbreaking. Many nights after we closed down, my Uncle would give me free cooked catfish that was not served, but rather sat under heat lamps for no more than an hour. I would collect the fish in a standard brown paper grocery bag and bring it home. I would eat and share this fish with my Parents over the next several days. There was nothing wrong with this food. Had I not taken it, the food would have been thrown in the trash. This just always seemed so wasteful, even for a young chap like me.

@@rockbay79 . We Indians have such a bad habit of wasting food ( the educated and the richer ones), going to a buffet counter, taking all food, almost half of it they dont eat! In many German restaurants, you have to pay more if food is left in your plate. Most of the Belgian people here do not waste food. They eat almost everything what is served on the plate. They are tourists who come here from different destinations who waste food. In an Indian restaurant in Antwerp city...they have firmly written, " Food is precious, please do not waste", " It is a shame to waste food, please take only what you consume"....it is all over the walls.

I think south indians also need to start doing business and get more educated. then this north indians will not able to look down on south Indians.

At first I didn't care for the older man who was selling the Manchurian dishes because everyone else was making their food from scratch, with fresh ingredients, and this man was just opening already pre-made packaged food (cans/jars/bottles/etc.), cooking it up and selling it. But when he said "you don't have to have money to eat at my stall", and when he gave the leftovers to the less fortunate/children, that REALLY warmed my heart. This lifestyle/community is truly INCREDIBLE and an inspiration.

@Airbus A380 everything we buy has tax included in it. Income tax is very small compared to what we pay to gov. On all those indirect taxes. And also looking at are governments they deserved to be cheated.

Software Engineer with no brains like a dodo works for the Western companies, he is being paid very less in dollars just because the conversion happens it appears to be a lumpsum amount, the so called software Engineer has no innovation doesn't understand any business and keeps coding without knowing the overall picture of the business structure so he stays in the same place with 7% increment every year, nothing to be proud in it. As per your calculation the SE just makes 6700$ per year for doing the same work as an American sometimes even more, the idli wala can't be compared with an SE.

When these people say I earn this much, they are telling the total sale of the day or month. You have to subtract product cost & traveling cost. The final profit they have is hardly 1000 to 1500 per day. Trust me my brother is street food vendor. So stop looking at their hard earned money. Show some respect.

@@harshal369 I'm still working at same salary at the time of joining it's been 1 & half year also I've developed many skill from the course of time and before joining too I had many skills on my hand but really I feel like the skill also aren't adding anything, I feel like I have to leave the job and start something else I hate the fact that the labour gets high pay than me (for reference labour get 500-900 depending on their skill) per day in the same company when I have more skills then them. The whole system has went upside down.

@@Designingtech 220 per day!!! Which company is that, that gives you so less.. and you say, it's been 1.5 years?? Don't loose hope, Shubham. Up skill yourself. Learn the latest technology. Make a good portfolio on GitHub, Kaggle, Hackerrank, Hackerearth, LinkedIn, etc. Solve problems from websites like projecteuler.net. Keep practicing and improve your skills. By next year, God willing, you will be in a good position to give interviews for good companies.

@@Designingtech oh so you are into 3d designing. Why don't you showcase your work on dribbble, behance, pinterest. Post your personal work only. Make a public profile. Become the best in your work and then put it on your own website (of course yoh will have to make your own website later on, which is easy).
