I’ve driven the 296 GT3 in vr in both acc and iRacing and iRacing definitely did a better job, but you would expect that given the price gap

The car is "using" only five gears. It's not ready for that track.

The 5 gears are perfectly fine for this track. This car would probably only use 6th at tracks like Spa and Monza
