I’m married to a Filipina woman for 47 years and I have never grown tired of eating adobo. It’s the first dish my wife ever cooked after we were married. Yummy yummy yummy!!❤😋

The great thing about adobo is you can customize it some. I love pork adobo. My wife will sometimes add some chilis to kick it up a notch, or add a little oyster sauce and less soy. She usually uses cracked peppercorns or ground pepper instead of peppercorns. Also, white adobo with just little bit vinegar and soy, then oil and salt added at the end. I love cooking and make adobo, too. I use roughly 2:1 ratio of soy to vinegar. The key is to be careful how much vinegar you add in. You can’t take it out. If your soy is a little heavy and it’s salty, just add a little more sugar. The best compliment I’ve ever received cooking was when the kids came home from school for lunch and told their mom the adobo was extra good, but I was the one who cooked it 😅

Adobo is my favorite Filipino food! My girlfriends Mom makes the best chicken and pork adobo. She made us squid adobo last week, i didn't know there was squid adobo haha. It was good also

Wife and I were at a nice restaurant in Tulsa Oklahoma. Our waitress asked my wife if she was Filipina. The wife answered yes. The waitress brought out a soup that the Filipino chef made called beef adobo soup. It was delicious.

❤❤❤ Fun Facts! I have incorporated coconut milk and it’s delicious. It helps thicken the sauce and helps reduce if it’s too salty. Sometimes I’ll garnish it with chopped cilantro. I also added quails eggs because they are bite size and chicken parts like heart and liver. Great job Pat!

indigenous people used vinegar and salt to preserve food in the tropical climate. The word "adobo" comes from the Spanish word adobar, which means "to marinate". Spanish colonizers named the Filipino dish after their own adobo after witnessing the similar preservation method.
