The sauce I think is bagoong which goes with the kare-kare. Also, instead of inasal, probably better to put kare-kare against kaldereta since they're both stews.

Yes it's okay to feel that happy when you eat. hahaha. Eating makes me so happy too especially when the food I eat is so yummy. For me, my top 3 would be kare kare, pansit palabok, and bulalo. Maybe because I dont eat those foods often.

I think the sauce foe the karekare vs inasal round was bagoong which is meant to be paired with karekare😁 I'm not sure tho if it's really bagoong

"Inasal" just means "grilled". It's the Ilonggo translation for Tagalog "Inihaw" and Cebuano "Sinugba". It refers to the traditional Filipino method of cooking meat on sticks or bamboo. The Lechon, for example, was actually originally called "Inasal"/"Inihaw"/"Sinugba" too, before the Spanish name became more common.

You should do sinigang beef vs bulalo. For palabok, that's not palabok that's pancit malabon. The noodles in palabok is thin white and on top of the noodles there are squid, chicharon lots of garlic

If you eat kare-kare with bagoong (salty shrimp paste made from tiny shrimps), it will taste better. 🙂 It think the "pupa sauce" you have there is the bagoong.
