I fillet a 150 lb swordfish and show you what the fish was eating! He was stuffed full of squid! It was also a "pumpkin swordfish" with orange meat and we put it side by side with normal swordfish meat.

I lived in Key Largo for twenty years and did this mucho times. Great fun. Our deep freezer was always filled with sword fish, red snapper, grouper and Florida lobster. We caught stone crabs too but didn’t freeze them, gobbled them down for dinner.

Swordfish live in deep waters and follow the squid to the surface when they at night. We would have lines held out on balloons near the surface and at 100 and 200 ft deep. We fished about 15 miles east of Key Largo in the 1000 ft deep area starting about midnight and going home at sun up. My boat had bunks so taking turns snoozing was the ticket. Of course, all hell broke loose when a sword fish hit our bait! What fun we had. GlennFHoward

Nick, do you ever cut double steaks? Like that last piece you said was your favorite, instead of cutting down the blood line just leave the halves together? I know it’s a large steak but when I was in Italy, they had some like that. Great work as always.
@StanzFam
@StanzFam 4 жыл бұрын
On small/medium size fish we will leave the steak the size of the fillet sometimes , usually once they get over 100 lbs I start “quartering” the fish, and split the fillet in half , down the blood line just to make it easier to bag and cook

Question, do dolphin belly's reflect or show better color presented although squid seem to be main source in billfish consumption?
@StanzFam
@StanzFam 3 жыл бұрын
We just like using them because they are more durable and hold up longer to the abuse from the swordfish striking the bait multiple times before eating it usually.
@kenbeckman3014
@kenbeckman3014 3 жыл бұрын
@@StanzFam Im trying to learn because Im thinking because of their eye size they see in different light spectrum. The fish belly reflects in what they want which is what squid emulate in the light wave the swordfish see.
