I would like to add some information about wet aging and its role in beef production. Wet aging is the process of vacuum sealing a cut of beef and refrigerating it to allow the microbes within the beef muscles to begin the process of breaking the meat down, which makes it more tender. This process also allows the beef to remain moist - a very notable difference to dry aging where you want the beef to dry out to some extent, which will concentrate the flavour. With dry aging you will lose a substantial portion of the beef muscle the longer it is aged, which does not happen when you utilise wet aging. You will usually find a steak has been wet aged for around three or four weeks, but the microbial load within the beef will remain active for upwards of five to eight weeks so, though rare, you may occasionally find steaks that have been wet aged for longer than four weeks. Wet aging does not give you a "sloppy steak" as Joe eluded, and you may be surprised to learn that worldwide most beef that is available in a supermarket is wet aged for at least three weeks. Beef from a steakhouse can be either wet aged or dry aged, or quite often you will see both aging methods utilised.
