Beautiful plating. My big question is how do you ensure the food stays hot especially if doing multiple platings? I’ve cooked for years and have struggled with this issue, even after heating the plates.

There is not any magic, you have to make food hot and then be fast in plating. Everything is about timing.

I just made this and it was so delicious! I also added roasted walnuts to the plate for more texture. I did struggle a little with the timing of all the different elements but next time I make it will be easier

Even if is evaporate the taste stays there. Ofc you don't wanna evaporate it completely just melt slowly caramel

I don't think it even matters with chicken. It will be tender both ways if you cook it properly.

The only issue I came across with this was when i boiled the broccoli and took it out and then waited for it to dry in order to apply the glaze and then realised that the broccoli was throwing out so much water and it started mixing with the glaze and then the crushed almonds became very soggy and moist

Yes you have to push out the water as much you can before you put a glaze.

In the best case, you should finish everything at the same time. And sauce and puree you can reheat easily in the pot

Just stumbled upon your videos. Love them! Question - 1/2 chicken breast and 3 pieces of broccoli... how is this a full portion? Seems like 300 calorie dinner I’d be starving 30 minutes after eating.

I am not a nutrition trainer, I am just giving inspiration on how and what to cook. If you need more food just to cook more. Btw. If you go to a fine dining restaurant you see that the main course never gonna make you full, you have to get at least a starter and dessert to be full ;)

You could always put leftovers in bowls or on plates and have at dining table if people would like seconds but with bread and starter, entree and then dessert you would probably be full.

I tried this receipe but the gazed dip for the brocoli was not succeded. Which soort of balsamico did you use? One used for salad? A sweeter and old one? Also how to caramelized the sugar? It went in klonks and solidified in the pan. The rest was super delicious. Specialially this leeks puree.

I mean should be enough, if you do fine dining dinner with a starter and maybe dessert. If you do just one course, put some roasted potatoes or more broccoli and shallots.

Why sauce and puree with risotto...risotto is a separate dish, don't see a point to do risotto with puree and sauce for me. To be honest, never make risotto with any sauce or a big piece of meat.

I noticed that in some fine dining dishes there are no carbohydrates, and do such dishes without starches or high in starch vegetables fit the A la carte menu?

Yes why no, people don't go to the top class restaurant because they wanna make their stomach full, but because they wanna eat delicious food. So you can do what you want even in the restaurant if you dont cook for bodybuilders..
