Coating the legs in duck fat or goose fat (or, if you insist, oil) and then wrapping them well in a couple of layers of baking paper and then foil, means that you need a lot less oil. When I confit legs I cook them at a very low, temperature-say 80ºC (176ºF)-overnight. Though poor I can afford to have a good supply of duck fat by waiting until frozen ducks are on special at the supermarket, say Aus$15 (which is about $US10) for a 2kg duck (4lb 6oz). When the duck is thawed I cut off breasts for one meal for two, the legs (with thighs) I confit for another meal for two, and the rest of the duck I make into soup for two meals for two. For $15, I make the main part of four meals for two and collect about $12’s worth of duck fat (based on supermarket prices).

Former michelin chef saucier reporting. Knife skills are a real game changer. Learn to lollipop drumsticks and butterfly chicken breasts and you just opened up a bunch of creative possibilities like fillings and rubs, marinades and breadings. Theres also great channels on plating that will inspire you. Save up for a good knife, or thrift one, sand the handles and get good with a stone. Enjoy the process.

Tip: Roast the chicken confit at the end at high temp oven instead to get an all-around crispy result without oil splashing everywhere. Also oil is expensive, so unless you want full-traditional confit where the chicken fully submerges in oil, you can roast in a lidded pan / dutch oven with a splash of water, roast at 250 for 1 hour, take out and flip and toast again for an hour, the oil from the chicken skin will help submerge a large part of the chicken in the pot.

@@datcheesecakeboi6745 it’s not confit but it’s a even poorer-man version to get the meat half-submerged in its own oil. I’m referring to Carla’s quick duck leg confit recipe on Bon Appetite. The water will release oil from the skin and help cook it. That’s obviously if the chicken you choose has lots of fat in itself to be released already. Or you can also add more chicken skin scrapes to release more oil too.

I love this! I love cooking, sure I can make fancy af dinners like beef wellington or wagyu steak (only on very special occasions, I'm not made of money), but my real skill comes out when I'm making really nice, fancy feeling meals with super cheap ingredients. I like taking the "nice" cup noodles, cooking them in the microwave like normal, then straining the remaining broth to reduce on the stove. Then I cook an egg or two and some rice. Make a small circle bed of rice, noodles on top of the rice, egg covers the whole thing, cover in reduced broth. It fucking slaps. It tastes great, and looks fancy af. Oh and green onions on top if you have them. The iron chef dad that makes fast food gourmet really inspired me to start getting creative with cheap stuff in the kitchen. It's so fun. And my wife enjoys eating my creations. So win win. PLEASE MAKE MORE OF THESE

Gravy is pretty easy and pretty cheap to make on your own!! Melt 1/4 cup butter in a pan on the stove, add 1/4 cup flour, let that cook while stirring until it smells a bit nutty, then whisk in 2 cups of your preferred broth or stock and bring to a boil. Lower heat to a simmer, whisking occasionally until desired thickness. If it gets too thick, slowly add more liquid until it’s back to your desired consistency.
