Firecracker chicken
Ingredients
For 8 chicken legs
2 scotch bonnet
1 tsp each of red chilli flakes, salt, paprika & pepper
A squeeze of lime or lemon juice
1 tbsp minced garlic
2 tbsp chopped coriander
2 tbsp olive oil
1 tbsp apple cider vinegar
2 tbsp dark soy sauce
Cook for 1 hour covered on 200C, then grill for 10 mins uncovered.
Garnish paste
Microwave together crushed garlic, red chilli flakes coriander with some melted butter for 1 min and brush on the chicken just before serving
