Maple season is topically around March when the night is cold and days are worm.

I suspect a very dry sap harvest unless you wait six months. But I've never tried in the fall

I like your optimism about getting "all" your major projects done.. yeah,, we'll see how that goes..lol .. .. here in the sunny deserts of southern AZ it will be 49 tonight.. Autumn arrived 2 weeks ago and it has been rainy, cloudy and 15 degrees cooler than normal every day since.. I was not quite ready for it, but................

@off grid nation Hi OGN! i live in New York. Winchester county to be exact. we have only gotten the first feel of fall about 3 days ago when the storm front with the remnants of hurricane Michael passed through. over the past few years it seems it has been staying warmer longer in this area. at the moment temps have been staying in the upper 40's to low 50's and i am still wearing shorts. but i have nerve damage in my arms and legs and don't feel the cold like i used too.

Trees are tapped in the spring in the 2 weeks just before the last frost. It's the sap flow which brings the leaves out for spring that it's done. Just FYI.

I always enjoyed the maple syrup process. But there is one thing that gets tiresome...those taps pretty much need to be checked every day. Leaving the sap outside will result in sour sap if you're not careful. Gotta get it refrigerated and boil at least weekly. People in areas with a lot of snow can store the sap nestled in snow to keep it refrigerated, but people farther south like you and I need to get it inside. This was tough on me when I'd get home after a 13 hour shift and have to trounce through the woods, up and down slick hills carrying 5 gallon buckets of sap. Again, I treasure my memories of sugarin, but was a bit relieved that my new land doesn't have maple trees.

Do your homework on pigs. Unless you have a free source for feed, it is hard to justify the work involved. We butchered hogs every year. Feed came from restaurants and produce stands. Even got honeybuns free a few times!! I live in York county sc myself.
