love this video and recipe! Great job! I love my le creuset pans..have a number of them..but a suggestion..get a less expensive pot for frying .I believe it ruins the pan, so i use a lodge designated for frying, which is also a great pan, but not as expensive.

"Fish & chips"? Those are "fish & crisps". ("Chips" in the context of "fish & chips" are what Americans would call "French fries.")

No, he was born and raised in France (in Burgundy), and moved to the USA in 1996, when he was in his mid 20s. He began his culinary education at the age of 14, and is a chevalier (knight) in France's Ordre des Arts et des Lettres.
